    Having seen the whole season. He REALLY hit the nail on the head for Friends and Family.

    when we opened instead of Friends and Family we had a party. Invited local food bloggers, reporters, and fellow industry people. Selected certain dishes that we could modify to be passed appetizers. Chef's still had the chance to cook the food, FOH still had the opportunity to explain dishes and interact with guests, but it reduced the stress and created a more laid back environment. Managers then took the next day to go over everything and assess before we did a more traditional Friends and Family and soft opening.

      This is exaaaaactly what I'm sayin'. So so glad it reduced stress, hopefully also helped with giving the guests a good experience too.

    I really enjoy the shot at 24:20, where the BoH and FoH are seated separately (as brigades) but together (as a team) at pre-shift. Small details like that really help make this show feel real, to me ❤
    I will always miss working in kitchens from the bottom of my heart. A part of me will always feel like it belongs there.

    I'm amused by how anytime I heard discussed Syd and Carmy under the table, people refer to them 'fixing' the table. They are not.
    They are adding Handbag hooks. I recognised them on first view and love this tiny attention to detail from production design.
    Also... If you have an eatery, do handbag hooks, that attention to customer care is a tiny investment with great returns

    Not ashamed to admit I've made the "famous" omelet about a dozen times in the last month. Tried passing the eggs thru a sieve once - for me, it didn't really make it better. Also (don't come at me ppl) I don't like butter in the pan but prefer olive oil. I get the idea of the potato chips. It is kind of like putting croutons on a salad - texture. But I am going to try to find a better brand because I felt like I was tasting "fake flavorings" coming thru. Maybe I should try making my chips? God, what has this show done to me...??? 😀

    I can’t afford Hulu so I’ve only seen the first season but my favorite character is Carmen’s brother cuz from the bits and pieces u get from him I relate to him but my favorite “main” character is Ricky

    Maybe this is a "the curtains were blue" take but I think Syd wearing her chef coat out is a nice little character detail. She lives and breathes for her ambitions, it consumes her whole life, in comparison to a Carmy who is maybe past that point in his career and is distracted.

      Exactly why I mentioned that I had a "season" in my career where I did the same thing 😉 I think my decision to stop doing that came down to practicalities more so than being distracted. Example: I would literally just be more comfortable sitting in the dining room and being on the phone with purveyors in street clothes rather than my chef coat.

    Love you videos! I was also always taught that a chef wears a double-breasted jacket to give insulation from stove heat or spills.

      Also totally true - there are a bunch of features built into that design! The buttons are also supposedly made in that way so it can be ripped off quickly in case your chef coat starts on fire or something hot spills on you.

    16:57 I’m right-handed, but I don’t touch pans with right hand. My right hand is for spoons, spatulas, and ingredients. My left hand holds my towel which never leaves my hand during service (everything is hot in a kitchen). So, I would personally prefer to have the pans stocked on the left than on the right. Am I the only one who works that way?

      I'm the same - utensils go in the right hand, pans in the left hand. But I guess if your dominant arm is "stronger", it's easier to pull down like 3 pans at a time if you need? That's justification for right side. But yeah you'd have to swap the towel from left hand to right. Worth experimenting both ways for sure.

    A different take on Friends & Family: in the last year I've been on the opening team for a restaurant and a Hilton property in Atlanta. One difference in "friends and family" that wasn't mentioned in your review, a lot of press, Instagram food bloggers, food reviewers, professional food critics, etc get invited. A restaurant like say PLANTA, when they do their soft opening, they will also invite their regular guests who have signed up for updates, events etc. ...my 2cents 😊

      Totally agree - I kinda mentioned it when I suggested "curating" those guests on that actual soft-opening week that I think folks should prioritize, I believe it's a huge plus to develop relationships with local publishers and have them really become evangelists. But yeah they didn't really have any influencers or press come for this F&F night in this episode.

    The Porter shirts have always been a thing just not in per se, and the three Michelin star restaurants. I wouldn’t credit the Bear for making this popular.

      Really? Cause the board says, "Welcome Broth, Focaccia, Crudo, Cannoli, Seven Fishes, Bolognese, Gricia, T-Bone" and the episode list is "Beef, Pasta, Sundae, Honeydew, Pop, Fishes, Forks, Bolognese, Omelette, The Bear". Even if we say T-Bone and Beef align, that's only 2 with that and "Bolognese". If anything I'm trying to not "see" anything deeper, past the fact that it's just the menu lol
