I love your process of de-pooing them! I really learned something new. The only problem is that I usually get a minimum of 15 lbs. of crayfish and couldn't do that to that many. I would never eat! 🤣🤣😁😁 Great video Scott.
I don't know if you have heard of a Low Country Boil before, But in Georgia, we catch a heap of them, then boil some corn and potatoes, boil the crawdads(crayfish), throw the potatoes,corn,crawdads, few sticks of butter, and a bottle of Tony Chateres Cajun Seasoning into an Igloo Cooler. Shake the hell out of the cooler for a while to mix it all together, it also breaks up the potatoes and gets the butter all in them. Dump the cooler on some paper and everybody digs in. It is really easy to do, and a good party food. Don't care how healthy it is, it's damn good eatin. I love your videos man, keep up the good work.

I would like to see the old school way of cleaning them with the salt. I have never seen that. Can you do a vid showing that, coz it would help us out at the resteraunt when I deliver them. When we import lamb from NZ it is shipped in 3-4 weeks bit when we buy it in the supermarket it has a usebuy date or around a week. Why does British lamb have a similar shelf life when it's not had to be imported? Cheers 😊
Ill be glad to send some red fin pickerel. they are only about 8 to 12 inches long. Only takes a dozen to make a meal. Once fried , they only have a backbone that comes right out . Catch them in the same little streams as crawfish .

I'd love you to do a video where you go just go behind the scenes in a typical small town butcher shop. I've no idea how it all works, do they always get carcasses, or just small pre-prepared joints they break down? My butcher rarely has ribeyes, and I have to preorder oxtail even, so presumably he isn't getting full/half carcasses delivered, but just a bunch of semi-prepared retail products?

As cool, useful, and fun as these usually are, this one is the best by far. The intro was especially nice as virtual transportation from the USA (you’re welcome for the sriracha👍, sorry about the crayfish and grey squirrels 👎). Have tried making a broth of the shells and heads. You should! Can suck the heads, too. Bet this would be a good etufe with a sausage you made earlier.
I've turned my daughter into Crawdad fiend, just the same as I. She also sucks the heads of not only Crawdad, but Shrimp as well, as you should. You can also make a Bisque, or make a Sauce Americaine with the heads and serve with rice. You know, if you wanna get all fancy 'bout it. I also simply enjoy Crawdad with lemon, butter, some wild greens or cabbage, and some hot sauce on a tortilla.
I might have missed it, did you season that water? They're so much tastier when you over season the water. I know it may sound crazy but try it. Season with salt, garlic, onion, cayenne pepper and crab boil.

For you sarracha mayo, add some sweet chili sauce, I usually do equal parts of all 3. We call it bang bang sauce on the east coast (maryland)
Those claws are some of the biggest I've seen compared to the tail size. Those UK crawfish are healthy.

They have a tall gas cylinder (like a hairspray canister) behind the control knob, cost a tenner or so, I got mine from Aldi a few years back.
