  • My family's recipe for an extremely crispy skinned Roast Pork Belly that doesn't jeopardise its juiciness. A traditional Chinese BBQ meat that has everyone raving when you get that satisfying crunch from the skin. It's a great treat that will wow everyone at the dinner table, so give it a go. No need to line up this Chinese New Year!

    Great recipe! Just tried it, majority of it was perfect. However some pieces were crispy, but pretty dam hard. What can i do to make it perfect all the way thru? Was it bcuz i didn’t poke enough holes in that area? Also i only did 24hrs in the fridge as opposed to the 2 nights in fridge. Let me know what went wrong ! Thanks

    Thanks for posting this video. The tips about using the toothpicks to pin the foil and skin and preventing moisture from pooling while it cooks set your video apart from all the other crispy pork belly videos. The results look great. I will have to try it soon.
    What is the metal ring normally used for? What are some alternatives? Would a small soya sauce dish work?

      I believe that ring is meant for cutting circles in dough, but that being said anything that's safe to put in the oven should be adequate. You don't need the curve to be too drastic, otherwise (depending on how your oven distributes heat) the middle portion of your pork may roast and dry out before the other sections roast completely.

      When crisping the skin, can I use the Broil function of my oven? I am going to go out and pick up the ingredients to try out your recipe. Thanks.

      @Phil So You can use the broil function; however, you'll want to make sure your pork is on one of the lower racks and you need to pay constant attention to the skin. Broiling can easily brown/burn the skin before it gets nice and crispy. We don't use broil (since our convection oven doesn't have that function) so I can't really give you any directives other than that. Quick tip I didn't mention in the video, and if you haven't bought it already, try to haggle a piece of pork belly that's from the center of the belly. Cuts of pork belly further from the center will have saggier skin and won't blister up nicely, kind of like what happened in our video.
      Hopefully this helps (I just woke up so hopefully I'm in the right state of mind XD). Good luck to your roast pork and happy festive season!

      @@MulYeungCooking Thanks for the advice. It makes total sense. Are you an engineer or similar?
      I don't have the metal ring (cookie cutter?) so I was going to use some crumpled up aluminum foil.
      Your approach is very analytical and very thorough. Your video is the only one of many I have watched that mentioned details like pinning the sides of the foil box to the meat to protect it better and preventing moisture buildup on the skin by using the metal ring , pinning the corners of the skin and soaking up any moisture with a paper towel during the crisping phase.

      We use a convection oven, not an air fryer; however, the concept for cooking is similar between the two.
