I've eaten a lot of great authentic Ramen growing up in Asia but this one was truly an experience. He serves a fish broth ramen there as well. Super interesting.

As someone who is training to be a chef, it is interesting to see the reactions as each person tastes their dish. The level 1 people are always like "Oh yeah, that turned out pretty good." The level 2 are always like "OMG this is so delicious!" and the level three chef's reactions are usually a lot calmer, and more down the lines of "Yes.... that is made correctly."
Props to epicurious for getting an actual professional ramen cook. I love Frank but I wasn't looking forward to his special saffron and veal ramen with noodles made from a rare sacred flour that is only harvested during a lunar eclipse.

Level 1: Store-Bought Noodles Level 2: Store-Bought Noodles with a bit of piZZAZ Level 3: You want 500 miligrams of flour and adjust your water until kneading feels like leather.
Dry noodles are one of those foods that work very well. Freshly made noodles are slightly better but for most people that are not professional (or love making noodles), the difference in a pasta dish is in the sauce and toppings, not the noodles.
Making homemade ramen noodles, unless you want to develop it as a skill, is more trouble than it’s worth. It requires more advanced technique than other varieties of homemade pasta, and is very easy to get wrong. If you don’t have a lot of practice, your homemade noodles will probably be worse than what you could get at an Asian supermarket.
Idk how it is in America, but in Europe shop noodles are just as good as home made. If you are profesional chef then you have skills to make better noodles at home, otherwise I don't think so.

Most of the time when you eat soup dishes in Japan or even in some Japanese restaurants in other countries, they usually give you a Renge spoon since some people like to start with the soup before eating the noodles. I like eating the noodles first though since it gets soggy the longer I let it soak in the soup.

When you were talking about Yuji’s assembly you said he added Konbu as a topping, which is incorrect, what he put on top was Nori which is a different type of seaweed, Konbu is dried kelp.
@@judspizzy Kombu is dried kelp, used traditionally in making dashi or broth. It's tough, fishy and is used pretty much used exclusively for cooking. Nori, on the other hand, is roasted seaweed. It's light, crunchy, still fishy but with hints of salt and the roasting process. They're not only different plants, but taste different and serve different purposes. A minor slip up, sure. But context matters in this case, especially.

I only really eat packaged noodles for dry noodles like zha jiang mian and cong you mian. To me, it's always important to make ramen from scratch, mainly because packaged ramen with flavour packets are so one dimensional, you're literally eating salty water with rehydrated noodles. It tastes awful.
My family wouldn't even do that when the block was bigger than the pot, it surprised me she did that xD I would break normal spaghetti in half to trick my mind into believing I ate a lot
If I'm being honest whenever I watch these videos I always prefer the level 2 chef because it's not too bad, but not too fancy either. It always seems like it's made from the heart and it comforts me :)
Lorenzo is that guy who keeps you going to that chain restaurant because he can cook everything well, so you dont have to fuss with cooking on the weekend.

An easy way to scale a fish without the scales flying everywhere is to fill a bowl with water and scale the fish with a fork or scaler in it.

One time i was desperate for something to snack on but i was so lazy to go to the store, so i grab my instant noodles, pour in the seasonings, and give them a good shake. Tastes like MSG and salt :3

@@Ironlantern723 I did say to each their own. I was only stating I found it abit weird, because at least for me when I started eating ramen; I wanted to learn to use chopsticks. That's all.
Most of the time when you eat soup dishes in Japan or even in some Japanese restaurants in other countries, they usually give you a Renge spoon since some people like to start with the soup before eating the noodles. I like eating the noodles first though since it gets soggy the longer I let it soak in the soup.

When you were talking about Yuji’s assembly you said he added Konbu as a topping, which is incorrect, what he put on top was Nori which is a different type of seaweed, Konbu is dried kelp.
Why does it matter
@@judspizzy Kombu is dried kelp, used traditionally in making dashi or broth. It's tough, fishy and is used pretty much used exclusively for cooking. Nori, on the other hand, is roasted seaweed. It's light, crunchy, still fishy but with hints of salt and the roasting process. They're not only different plants, but taste different and serve different purposes. A minor slip up, sure. But context matters in this case, especially.
They should have a level 0, where the person only has a vague idea of what it is they are supposed to cook

To me, it's always important to make ramen from scratch, mainly because packaged ramen with flavour packets are so one dimensional, you're literally eating salty water with rehydrated noodles. It tastes awful.
