Interesting that you want to celebrate the birthday of photography, the 185th if my quick research is accurate however you forbid the use of any camera constructed in the first 160 years or so. One might think that an affirmation by the photographer that the photo was captured on the 19th would be sufficient but it’s your project so it’s your call. Best of luck with it but my film photos can’t be part of it.
Peter - a suggestion for you to consider about the charity that you mention to receive some of the profit's etc ; you might want to consider Medecins sans Frontieres / Doctors without Borders , a really worthwhile ,truly international charity which focuses on bringing health care to e.g. conflict zones / hard to reach communities / is non political and uses its money very carefully.

My mind already started rolling about possible shots while watching the video half way. Brilliant idea! Regarding metadata: I use a mirrorless camera, but at the moment exclusively with vintage lenses. Of course, these will not provide any metadata for my photos. Would that be accepted, possibly with the lens information provided externally?

It is this way this time. Maybe I rethink this for next year. I do not know yet.

Yes, infrared is totally ok.
The idea is interesting, but the metadata, especially the shooting date, can be easily faked. So is there any point in spending time checking?
There is always hat possibilty and not much we can do.
