    I made these yesterday from a 1litre carton of unsweetened soy milk. I was too impatient to let them dry to a crisp and ended up forming them into 6 nuggets. They tasted fine when fried in sesame oil and dipped in hoisin sauce. As you say, it's a long winded process, took approx 90mins, but I will make again using soya beans and let them dry out fully.

    I love yuba and have cooked with it a number of times but I’ve never made my own or tried dried. Thanks for the demo!

    I had heard of it before thanks to Miyoko Schinner. She makes a vegan turkey using Yuba as the skin. I never used it for anything else. I am looking forward to your Yuba recipes as I make a lot of my own soymilk and would like to try making it (well, at least once lol!).

    I wonder if you poured this into a sheet pan with a brim on a warm griddle you could get more surface area and work a bit quicker.

    I have heard of it. In fact, I have a package of dried sheets I recently purchased. I wanted the kind you have (bunched sticks); but, they were out. Is it normally expensive? I don’t remember what I paid for it; but, I remember it being a lot more than I expected. I definitely want to make it. How long did it take to air dry? I was thinking about dehydrating it, or at least using my dehydrator mats, I don’t think it would stick as much.
