Spring rolls

- Ingredients
1/4 cabbage, julienned
1 carrot, julienned
60g snow peas, julienned
60g wood ear mushrooms, finely chopped
2 spring onions, finely diced
1 tbsp peanut oil + more for frying
1/2 tsp salt
1/4 tsp MSG
1 tbsp soy sauce
1 tsp corn flour (mixed with 2 tbsp water)
10 spring roll wrappers
Dipping sauce
2 tbsp fish sauce
20g palm sugar
Juice of a lime
2 tbsp water
small piece of ginger, grated
1 garlic clove, grated
2 birds eye chillies, finely sliced
Method
1. In a wok, heat the oil. Stir in the cabbage, carrot, snow peas, mushrooms and spring onion until the vegetables are cooked (approx 6-7 minutes).
2. Add salt, MSG and soy sauce. Mix well.
3. Add the corn flour mixture and stir until it thickens.
4. Remove from heat and let it cool.
5. Take a spring roll wrapper and place a spoonful of the filling on one end of the wrapper.
6. Roll up the wrapper tightly, tucking in the sides as you go.
7. Brush the edges with water to seal the roll.
8. Heat the oil in a large pan and deep-fry the spring rolls until golden brown.
9. Serve with dipping sauce and enjoy!

All I need is constant eye contact, that's pretty basic
Spring rolls aren't very easy to make though as they're very time consuming. I don't even make them as I'd rather just go out and pay for them. This is unless I'm having a party and need to make hundreds as it's easier to just go out and buy 2 - 4. Same thing for egg rolls as I'll make 200 - 300, at a time, and just freeze the leftovers. I'll then just heat them back up in the oven and they're just as good. Spring rolls I usually just make and eat as they're not very good if it's not fresh. I make the clear rice paper version so they're best eaten right away.

@@saysoun752 Totally agree. I think they're easy to make, but just super time consuming. Most people don't have the knife skills to do this fast. This is definitely something to prep in advance and freeze for later =).

I have a request, Chicken Pot-Pie. My aunt used to make it for me whenever she babysat me. She would make personal pies for all the nephews and nieces. Mine had Chicken, carrot and peas because those were the only veggies i would eat as a kid.
She would even put our initials into the crust. Pretty great memory.

Oh I know! Years ago one of my Philippino friends was telling me all the ingredients that were used and all the time that went into making them.
I remember thinking at the time that it would take me an entire day to make just enough to inhale in probably less than 10 minutes.😋😂
Although, her telling me how they were prepared definitely made me appreciate all the hard work that goes into making them even more.😍

It's not healthy after deep fried but if use a different wrapper and then steam it. It's healthy. Provided didn't season with too much sugar when cooking the vegetable.

The rolls that you mean are called summer rolls. The spring one are always deep fried
Summer rolls are never fried, but some places call summer rolls “spring rolls” and spring rolls “egg rolls.”
They’ve become more standardized the last few years though.
@@alexwillis2381no, there’s simply spring roll which is not fried and then nem ran which is fried. A spring roll is a summer roll, it’s literally the same thing. Nem ran is also spring roll, just fried.
@@FavdereActually no ur wrong it depends on the culture. I know thats the case within china and viet but in Indonesia there is actual fried spring roll the filling is also more different tho as here we fill our spring rolls with bamboo sprouts and carrots with chicken
@@izumikonomi3320 absolutely. there are so many different ways of saying spring roll or making it in different Asian cultures. Southeast Asian countries have unfried spring rolls and which in the West is categorized as salad rolls, and also fried version. In Chinese, it's a literal translation "chun juan"/ 春卷, which in Chinese is fried spring rolls. at the end of the day, it's still a paper-wrapped filling, depending if it's fried or unfried and what sauce you pair it with, ie. peanut sauce, sweet Thai chili sauce, or in Hong kong, Worcestershire sauce is preferred. It's filling also differs depending on preference whether you're vegetarian or meat-friendly.

Honestly, I like these "basic Mitch" ones, because they leave so much open. Like, you get an idea to work with, and then use what you have at home. Instead of having to run out and get specific ingredients if you don't have them at home already.

Some Australians put it on many Asian dishes. A favourite is mixing sweet chilli and sour cream and eating it with thickly chopped potatoes called " wedges ". It's good

It took me a while to realize that this was a Vietnamese dish, because the preparation method was different. We don't stir-fry the ingredients before rolling it up and it can have minced pork or shrimp, if you're vegetarian you can add mashed tofu. And the name of this dish is Nem Ran (spring rolls). The dish that is not fried in oil is Goi Cuon (summer rolls).
It's more Chinese i think, over here in Msia our style of spring rolls is basically stir fried yam beans either eaten with wheat flour wrappers or deep fried.

It's Chinese, called 春卷, spring roll. However plenty of countries influenced by China adopted it and adapted it to their own tastes and local ingredients.

Although in Chinese they are called 春捲, literally "spring rolls", here in the US they are called egg rolls due to some versions of the wrapper. "Spring rolls" are typically reserved for Vietnamese spring rolls wrapped in uncooked rice paper called "goi cun".
