You can make the whole process go a lot faster by using very hot melted butter I've been told that this causes the eggs to curdle, but in my professional experience this has never been the case. I just add the hot butter nice and slowly, and I've literally never had it curdle, and that's not for lack of trying. Before lockdown, it was part of my job to make Hollandaise multiple times a day Edit: Oh, and merry Christmas! It's always great to see a video from you
I planned to make this video a day earlier to allow editing time. That was the fail with the curdling - I think I had the butter hot and the water under the bowl boiling hard as well

Patience and attention to details, then validation from repetition, then mastery, then improvisation and "improvements" (one sees improvements where one may see heresy...). Yet, I also learn so much from comments and videos in ways I couldn't have expected. The glass bowl brings an "unforgiving" parameter into the execution for it isolates and takes time to warm up then to cool down so if you sense your temperature is too hot and think of moving your bowl aways from your heat source, the bowl won't oblidge and maintain the heat for longer than thin ss bowls which cools down in an instant, allowing you to undo the dreadful trend and correct the course. Hollandaise is all in the subtleties so every detail counts. And taste is personal... damn, everything is.

Using a food processor is a guaranteed emulsion as a chef I did that every day. Some people think its cheating but it's the very best way to get a luxurious hollandaise. And if your eggs are not fresh then use some vinegar in the water it will bind the eggs every time.
as far as i understand it the vortex in the water when making poached eggs is supposed to kinda swirl them in the center to keep the egg white from spreading out as much. also putting vinegar causes the white to coagulate quicker and without having to heat up as much so that a shell is formed which also keeps the egg from spreading out.

You can make the egg more suitable even if it isn't super fresh by tipping the egg contents onto a sieve spoon or fine mesh colander or something similar (or even your hand). The loose egg white will drain away and leave you with the firm egg white still attached. The vortex method isn't really that good, especially if you need to do a few at once.

Heh, this being the 1st Christmas in 38years (so, ever) I'm not spending with my family (corona isolating, no one is dead =), I decided to finally give a go at burek. Fell in love with it when traveling the Balkans a few years back. I've had the filo dough for 6months and today is the day!
@@EvaAdorable So, this is mostly what I went with th-cam.com/video/KCsnJH8awHw/w-d-xo.html I had a smaller pan so I just ended up ripping pieces of the filo dough sheets and assembling them in the pan. Cover your sheets with a damp towel every time you pick one up from the stack. And, instead of water/veg oil mixture, I went with (saw it in another recipe) 2eggs about equal amount of turkish yoghurt ~50g melted butter ~0,5dl water and brushed it on the sheets. Have to say, it was actually pretty easy to prepare and the result was (surprisingly😅) just as good as I remembered 😋 But, it's kind of like a pastry version of lasagna, so I guess I shouldn't be too surprised

for anyone trying to make the hollandaise, I recommend you drop in cubed refrigerator cold butter instead of streaming in melted butter. This regulates the flow of liquid butter, and you can focus on mixing the whole time instead of trying to keep a measuring cup stable
I think the swirl technique is for cooking one at a time in a considerably narrower pot, so the egg gets caught up in the vortex, keeping it a (likely) more uniform size/shape every time.

Not the be the well-thats-not-the-way-i-do-it guy but, i usually like using little cubes of cold butter, it melts slowly so you don't have to whisk so aggressively/constantly. Oh and btw the whirlpool is not an individual whirlpool for each egg, but rather one big whirlpool that fills up the entire pan.

If you like the idea of eggs benedict i reccomend looking for a youtube vid that shows you how to cook an arnold bennet omelette. It uses holendaise sauce but ramps up the richness by using smoked flaked haddock. Cooked into an omelette then while in the pan/skillet holendaise sauce is poured over and then cheese grated on top and is finished in the pan under the grill. The whole dishs is traditionally eaten straight from the pan

I tried making hollandaise with a hand blender (immersion blender, whatever) recently and it's about 1000% easier

I’ve never had eggs benedict sadly, but we had poached eggs on avocado on toast so, kinda like that!
