I'm going to copy and paste a few of the hints I shared on the blog post I created for this recipe about keeping cabbage crunch when you can it. Here it is: 1. Select only the freshest heads of cabbage for this recipe. The shorter time between picking and pickling, the crispier your cabbage will be. So, don’t use the ‘reduced for quick sale’ cabbages at the market, or older ones you’ve been storing if you want a quality result. 2. A safe option for firming cabbage is to use Pickle Crisp, a product containing calcium chloride. This ingredient is pure and does not contain any added salt, sugar or preservatives. 3. Make sure your cabbage heads are cold before starting. This helps expel a good chunk of excess moisture that’s hidden in the cabbage that would otherwise result in a soggy slaw. 4. Consider steam canning (approved by the USDA as of 2015), instead of water bath canning. Many canners feel that their pickles and cabbage are crispier when the jars are not stewing in increasingly hotter temperatures as the water comes to a boil. 5. Don’t skip (or skimp) on the pickling or canning salt in this recipe. Salt is what will preserve the cabbages distinctive crunch, because it draws out the water through osmosis. I've spent the first part of my life following the traditional path of school, work, and chasing after a career, only to get the farm bug bit in my mid-30s. My husband still has to finish his Navy career so we won't be purchasing a property for quite some time. Now, I know its not "old" but I felt overwhelmed by all I would have to learn figuring out how I'm gonna "pull it off"-Here's what I know so far: 1. The peace and joy I get from canning and growing a small garden and living more simply has been the daily joy I need in the middle of the day to day grind. 2. Shifting my focus to the small joys I get really is the momentum that'll keep you going and 3. I've got to be at peace that my 'farm dream' will just look plain different and that's ok, because ultimately, I'm pursuing this life for me and my family. Focus on progress, not perfection and no matter what, keep "becoming a farm girl"!

Love your enthusiasm and great ideas with food. Can I just point out one thing, in one of your videos you use a citrus hand squeezer? If you flip the lemon or orange rind up it works better. Keep the videos coming, your teaching this ol chick news delicious ways with home canned food. I love how you show how to use the food you can, not just the process of canning it. I call my little neck of the woods The Sunflower farm, my house sits on less than a half acre. I am in a rural city little town. Not a real farm. But I do grow and I have 2 chickens and 2 cats. But I love it. I grow and preserve all, I can for my family. That is what its all about growing food and having the joy from it.

I just found out about pickled purple cabbage and I've fallen in love with it. But, I'm single, so making just one whole head of this delicious dish seems to be too much so I was investigating whether or not I could can it. OMG! I don't think I'll need to now. Start with a small batch of anything you're not 100% sold on, and then, if you truly love it months later, amp up how you much when its back in season.
