Refika ! Why did you keep him from us for so long! Such a sweet person, and his energy is so positive and joyful ! I am glad he crossed over to the English speaking channel ^^ looking forward to try and make this, and also for more bread recipes ! Love from Algeria 🇩🇿 !
My family is Greek. My mother was born and raised in Istanbul, she left when she married at 26. Now she’s 82. We both enjoy your channel. We have excellent Turkish restaurants in New York City but not one that I know of has the one thing she misses so much. Tavuk Gogsu, the traditional one with chicken. I hope one day you will show this recipe.
I am Pierre from the island of Malta. I tried this recipe and worked out great. Love how you explain the recipes. Would love to visit Turkey and taste the real flavours of your country. Keep it up .
10 years ago I ate a doner in a shop in Germany and I fell in love with Turkish food. I kept trying to explain the sandwich to everyone and the best I had was, "it's like a kabob but with a slaw and on this really good bread, not naan." NOW I CAN MAKE IT!
I’m in love. Burak is adorable. I so wish I wasn’t an old lady. Another fab video. It made me happy because one of the best times I had in Istanbul was when it snowed. So many happy memories. My favourite city in the world.
My grandkids are coming and I will make this with my grandson, age 5. He loves to bake. His mama loves pickles so there is much to share from your videos. Thank you for every one of your videos. Winter here in Alaska is windy and cold, so warm bread and making things from scratch is necessary as there is so little world food in our part of the state. Blessins!!
Hello, just a random question, when is the best time to see the northern lights in Alaska? and what temperature will it be during that particular month? I'm in California :) I'm hoping to see the northern lights if we still can't travel abroad.
I am a Turkish girl. I love your videos so much and i am so thankful to you for sharing the recipes in english for people. I am having so much fun while watching your videos.
I love everything you make my father used to make it the way you do, I'm originally from Serbia but grew up in bosnia and now live in America but until by accident I searched for a recepi that I had in Istanbul ( shopping with my mom) I didn't even know about you. I'm so happy I found you, your recipes exactly like my father used to cook I cook from every country thank you
Today I am watching this on December 31, 2021. I am thinking of the people in Istanbul and other areas who experienced the storms last month. I am in the US. I pray that you lovely people are safe, warm, and blessed by God. Watching these videos has made me want to be in prayer for this little “family” in Refika’s kitchen…I’m going to continue watching the clips and praying for you. May the Lord bless you.
I ate Simit in Turkey once & fell in love with it. Please Burak and Refika, make it soon.. pleaseeeeeeeee ! Lutfen abla’cim. See i am now even speaking Turkish so you will have to help me ❤️❤️😅
Dialog between me and my husband just a while ago: Me (screaming when I saw Burak biting the sandwich): Aaaaaaaaaaaaaaaa!!! 😋😋😋😋 Niko (walking quickly near me): Is everything OK? Me: Watch this Refika’s new video & we’ll see if everything will still be OK!!!!😍 Niko (after watching the video and moving to the kitchen): Where the hell have you put the cast iron pan????😂😂😂😂 Refika, you did it again! 😍 Burak, you are so nice!😍 Bahar, I love the way you make the questions & give the “pass” to Refika!😍 Congratulations to all of the team! Amazing work!😍🤩😍🤩😍🤩
First of all...a great thanks to Refika and the whole team behind . I visited first time Istanbul in 2005 and since then i discovered all the Turkey travelling all around and definitely falling in love with all turkish people and turkish landscape ( a special place in my heart for Kurdistan). So i could discover and love turkish cooking ( which in some way is close to Italian cooking). Your channel has let me the possibility to trying at home some of turkish delicacy...so ...thank you again. In my next travel to Istanbul maybe we could meet and share some secret and some recipe of our tradition. A great thanks. Roberto and Annalia
Refika's analysis of color of oil and human preference.....is why her channel is thriving. well done for being such a thinker and observer. and Thank You (ofcourse i mean Burak) for the most important aspect of Doner kabob...the dang bread!!!!!
Welcome back, Burak. thank you for sharing your bread recipe. I live in a small apartment, and don't have space for the machines that many cooks need for bread making. i think that your method will work in my kitchen. I look forward to trying it.
Watching from Buenos Aires, Argentina 🇦🇷. Love your recipes, your humor and the positive energy the whole crew always reflects. Love you guys! Love you Refika 🎉💚
Honestly, the English that is spoken in your videos is impeccable! Gerçekten konuşulan İngilizce kusursuz! Ellerinize sağlık hemen deniyorum mutfağımda💓
For the tiles, I go to Home Depot and buy 12"x12" ceramic tiles with a glazed finish. They are about $1.25 each. I put the tile right on the oven rack or on an outdoor gas grill.
My name is Dawonna, from Oklahoma... I’m standing behind my husband in this profile. I Love your channel! Very informative!! Yum! I will be making this bread 😋
Refika, It would be practical and useful, if you mention in your video how many servings there are in the quantity of raw products you are using in your demonstration. For example, how many breads you get from 200 grams flour. Thank you!
@@natalyadragsberg8574 Natalya, if you want others (and Refika) to see your post, I would recommend you to post as a seperate comment under the video instead of posting your comment underneath someone else’s comment :D Regarding the servings: as they showed in the video, they made only one piece of bread from those 200g flour Have fun baking! :)
I am playing with bread making many years. This bread is AMAZING. I must admit, I waisted half of my life eating average breads. Thank you, Burak and Refika
I'm watching all the way from Sydney, Australia and I love you all. What a beautiful way to wake up! It's just turned 6 am and I'm waking my family up with the smell of bread cooking throughout the house. Refika and team my family and I love how much you've grown...and continue to grow. Before you know it you will be at a million + subs and helping so many more people with your enthusiastic smiles and joy. Sending many blessings for a very lucky year!!
You create everything with joy and love, and it comes through so clearly, Refika. Thank you so much. Your bread guy makes me want to hug him. So do you!
You bring back so many happy memories of Istanbul. I have been there in the Winter when it snowed and walking in the evening with the aroma of wood burning stoves, it was heaven.
Hi Shelley, thank you soooo much! Even though I can't always reply, it's lovely to see your comments and hear stories from you 😍😍 Since it's holiday and gift season now, I'd like to send you a small gift from our shop as a sign of my gratitude. I hope you'll enjoy using them 🙏 You can reach Ekin from our team via email about details and address information etc. Here's her email address: ekin@refikaninmutfagi.com Waiting to hear from you! :)
I loved watching Burak start to dance as you finished that sandwich, because I was dancing, too!!😄 Being from the South, I love watching people getting happy over food!💗
Depending on your oven you should not place anything on the very bottom. Most ovens have a heating element below the bottom and that could overheat if you place something on the bottom of the oven. Check your oven's manual whether you can place something on the bottom or if in doubt simply put the tray on the lowest rack.
Hi :-) What you‘re asking for with yufka is probably lavaş in Turkish. In German-speaking countries thy call lavaş yufka. Yufka is a super thin layer of dough - much like filo dough. So if you ask sb to make yufka you’d not be able to put döner in it. Or you could and you’d get börek with döner inside ;-)
Hi Refika, your bubbly enthusiasm is catchy and makes me want to cook a lot. I just have to try your wonderful recipes. I have tried all sorts of international foods but never Turkish. Somehow here in Cape Town I have never even been to a Turkish restaurant. Keep on being inspirational|
Refika my sister you have this infectious happy and positive energy just bouncing right off you..and you give it to all people around you and to everyone watching.... I love you..big hug from my side💞
You are such a smart cookie! as we say in the US - this stone method is brilliant! So many of us want a brick oven - well this is the closest answer! Thank youo!
When you look at each other after you both take the first bite says everything! I will try this Turkish bread for sure! It really looks yummy! And the sandwich idea is dangerously great!
Since Mexico City is at 2240m I’m still experimenting with the amount of yeast - first attempt was with half, 2nd attempt with half plus 1/8, next time will be 3/4. I love the simplicity of the recipe, and the bread has been delicious with good crust even though the rise was limited. I baked it in a large cast iron skillet and loved the result.
Rafika, this guy has some real magic. This bread looks so soft and tasty and I wish I could get this soft bread with doner kebab. The smoke in the inside part of the bread watered my mouth. Rafika, we once visited Antalya and there was the beautiful looking turkish salad with lots of vegetables cut and Tahini sauce. I would request you to teach me this. Its been long since me and my wife are missing that fresh salad.
Looks very appetising . I can have this alone for dinner (with may be a cup of milk tea / Masala Chai). Alternately may eat it like Pitta Bread and stuff with Hummus, Falafel, Lettuce and pickled vegetables.

Every Refika recipe I'm drooling. Look at all these textures. Soft meat, crunchy, moist cheese, tangy pickles and chewy flatbread. Wow!
