The answer to that is usually pretty simple. Is a Servant's NP support? Usually NP1 is fine, unless they're also able to solo and you need extra coins for appends/Grailing (Van GOAT, for example). Is it a damaging NP? In that case, the higher the better, and that rule is pretty ironclad. There are numbers on the wiki or spreadsheets you can look up for individual characters that tell you how big the returns on investment are (some Servants damage curves are wonkier than others,) but for obvious reasons, you want your DPS units to hit as hard as possible. You can sort of bridge the damage gap for NP1 DPS with Grails... which you need coins for, which means you need to roll for as many copies as possible regardless. Draco specifically has niche class advantages, so there's at least an opportunity gain and utility in simply having her at any NP level. tl;dr FGO is a casino, the house always wins, and no amount of card-counting and penny-pinching will change that. Esports cost money. Personally, I've made peace with having NP1 trophy characters.

Man I don't know! There is the Content Creators encouraging me to roll for many DPS units, and there is the Redditors turning me off from getting any servant that is not Castoria, Oberon, SIbuki and Kintoki, and to do hard content solo with a friend DPS unit. They even said hypermaxing SIbuki and Kintoki is better than getting niches and different classes. Recently, did some LB7 and found out that in some difficult quests you can't use friend unit and had to use mine. For example, my np1 Douman defeated the Daybit's foreigner team quest so well that I never regretted having him. I occasionally find use for my Melt, Melu, Reines and other 4 stars I got along, so I don't get that huge discouragement from Reddit side.
The game at the end of the day is “easy” especially if you arent super obsessed with min maxing farming. I never roll for gameplay for dps units I only hyper invest in units I like.
I've been in a similar boat but the best I have found is simply this. Objective 1: Select your favorite Zerk/Extra Looper. I specifically narrow it down as I rarely hear about people bringing say a Saber to an node that just happens to have an Archer boss wave 2 or even just a small archer enemy. But what I do hear is that at least as far as farming is concerned Zerkers are King/Queen of the scene due to just wiping the board with their 1.5x multiplier and never having deal with getting hit unlike before looping when they were a gamble for damage but came at a durability cost. Extra normally hit on neutral (so 1.0x) with out normally ever being resisted but you do have to be careful then cause some like say Alter Ego only work on Knights and typically not Calvary class enemies. As for Oberon, the reason for him while he may benefit buster a tad more the sheer benefit of his NP damage multiplier on skill 3 I wanna say is so astronomically high he's pretty much the go to for boosting your looper further to kill that wave 3 boss plus minions. Objective 2: Grab the Support that supports your looper's card type Plus Oberon. I choose this as you may choose someone other than Sibuki as your personal favorite in which case now having the uber support as well as arts support in the form of Castoria isn't going to help you farm at least and that is the majority of the game. You could like a Buster like the recent Kuku or Morgan or even a Quick like the new Zerk that just hit JP. Those would want Koyan Skya of Dark/Skadi respectively. Sibuki is generally recommended because from what I understand Arts has been mostly dominant for two reason. 1. Due to Arts getting NP refund most Arts can run Black Grail over a 50% charge CE but most events usually have a damage boosting 50% CE now so that point becomes less and less each time it happens. 2. Buster Loopers seem to struggle on Wave 2 due to the fact that most 90+ nodes put a big boss in Wave 2 vs just a normal 3 enemies. Objective 3 (Optional): Grab Kintoki: my understanding on this is vague but the best response I've gotten is that he's one of the cream of the crop for multi-core content seen in 90+ but mainly 90++ content due to his high damage single hit ST buster NP to just erase a mini boss while letting the AoE looper finish the third wave. This is the best I've figured out but simply put find a looper you like and their support + oberon. Even if you find yourself unable to do 90+ farming we were doing just fine doing normal lvl 90 nodes for years so it's always the tried and true method at least for me. Hope this helps!
Doesnt matter, if there is a servant you like cuz of the animations/character/gameplaystyle/design/voice anything at all... go for it. Especially if these servants are rare tp show up on Friends' support list. i have spent sq on bad servants that i dont need or bad but never regretted having them. Then again i didnt waste materials on their skills etc... But yeah, Castoria is Nuts. pair her with proper CEs especially the ones that give multiple np overcharges and win. then again you'd probably enjoy FGO 10000x more if you are not a completionist and fine with skipping Super hard special quests and dpnt have OCD for maxing avery skill for every servant for no fqing reason

Sometimes I enjoy servants I got by my own decision (Melt, Faker) way more than I thought and use them more than units others recommend me (like Kama) yet still recommended me good ones I use so much (Juano and Melusine). Like you, I never regretted any choice, good and bad ones. I wanted to do the Douman and Gogh team but reddit told me not get Gogh, but after what you said, I will get Gogh. I have zero foreigners and need to make things easy for me.
