200g beets (pre-boiled) 100 g plain unsweetened yoghurt 2 eggs 70ml oil 130g flour 2 EL dark unsweetened cacao powder 70g sugar 40g grinded almonds / almond flour 1 sprinkle cinnamon 1 teaspoon of a fruity vinegar, i use apple cider 2 teaspoons bicarbonate (or baking soda) a little butter or oil for greasing the pan - mix yoghurt, eggs, oil and beets - puree them until liquid, set aside - mix the dry ingredients (flour, almond flour, sugar, cacao powder, cinnamon) together - Add the liquid ingredients to the dry ones. Mix well - In a small bowl, mix vinegar and bicarbonate. It will react and bubble. IMMEDIATELY pour it into the dough mix and combine - pour into your form. Note: the dough is pinkish and pretty liquid (like in my video) - it will not rise much! - in the pre-heated oven at 160 degrees Celsius (320 Fahrenheit) for 60 to 70 minutes. if you want chocolate covering on top: 100 g sweet cream 150 g dark chocolate - boil the cream and pour it over the chocolate pieces and mix until melted, pour on top and let it solidify - You can also leave the cream away and simply melt some dark chocolate in a waterbath with some coconut oil Enjoy! :)

You have to adapt it to make it vegan but I think you would love it :)
