RECIPES
The River Café Lemon Polenta Cake
unsalted butter, for the pan
1 lb (450g) unsalted butter, softened
1 lb (450g) granulated sugar
1 lb (450g) ground almonds
2 tsp good vanilla extract
6 eggs
finely grated zest of 4 lemons
Juice of 1 lemon
1/2 lb (225g) polenta
1 1/2 tsp baking powder
1/4 tsp sea salt
Preheat the oven to 320°F (160°C). Butter and line a 12-inch (30cm) round and 3-inch (7.5cm) deep cake pan with parchment paper. Beat the butter and sugar together using an electric mixer until pale and light. Stir in the ground almonds and vanilla. Beat in the eggs, one at a time. Fold in the lemon zest and juice, the polenta, baking powder and salt. Spoon into the prepared pan. Bake for 45-50 minutes or until the cake is set and deep brown on top. Cool in the pan.

Pine Nuts (or toasted walnuts)

Firstly, when I go to my neighbours, it's usually a BBQ, Prosecco and dancing to the old 80s hits, whereas you just pop to your neighbours, and get to sit in that absolutely breathtaking Chapel to listen to the amazing Gospel choir....wow!!! Secondly, I had goosebumps and a tear in my eye when you sang - oh my goodness you have a stunning voice Leonora. Lastly, how and why have you hidden your stunning voice from the world??? Wow wow wow Leonora. This was your best blog yet. Besides seeing Karen twice ( how lucky are we), the delicious food and florals, your spectacular voice, that choir was beyond sensational. I live in the US but immigrated from South Africa I had tears pouring down my cheeks I was so homesick for that fabulous gospel music and energy. The chapel was insane as well. We couldn’t live more different lives, but I have to say I enjoy the escapism of your channel. I always dreamed of visiting the English countryside but with the world a mess, it may not happen so this offers me a glimpse. It’s a practical sort of escapism if that even makes sense? 😂 I have endured many hardships but I really try to find the joy in life. The joy really is from the small and simple things- family, animals, nature. It’s important for gratitude to be the attitude! I enjoy entertaining whenever I can and making things pretty is such an art. You really have me thinking I don’t drink enough champagne 🤔🥂😂. I’m so anticipating summer here in the Midwest. Anyways, carry on and keep living your best life!

This has been your best vlog yet. I loved it all. From the tablescaping, the florals, the food, then the utterly stunning chapel which brought a tear to my eye but then the choir sang (so proud they’re repping my home county of Leicestershire!)
