Looks amazing and I can smell it all here from the UK, I wish I could do a TV series going all around Asia showing white people why Asians are so special in their food and how they live and traditions and why we should respect them all more. I thought going to Nepal was amazing but what I see from countries all around Nepal is just as amazing, the other reason is that years ago Europeans plundered your area of the world and should be sorry and help out more in disasters.

Just went to the above Nan stall at Tekka Center, I order same item as Ghib, I can only say HOW did they get their Michelin? The Nans are like BLACK underneath! Really hate charcoaled food as they are so unhealthy and the butter chicken is much worst then my neighbourhood’s stall one..
Ghib, need to correct you on the milky fish soup. It's evaporated milk that they use, not condensed. I have had Sin Kee when it was at Margaret Drive. The taste has changed through the years.

You mentioned that you are unlucky to fats in char siew but actually fatty char siew is considered the best. If you go Malaysia, those more famous char siew store are the fatty ones. Those not fatty ones are less popular

No. Don feature Han Kee, it’s already crazy long. I have their fish soup for more than 20 years. Only open on weekdays for 4-5 hours during lunchtime. Last time, queue only 10 or so, now is already more than 20 in the queue. Now you feature it, I can’t imagine. Queue until the end of the block. OMG

If / when you go back to Japan 🇯🇵 and eat at their local “Chinese” noodle eateries, the cooks don’t know how to make the Cha Siu noodles. Their “Cha Siu” slices are round and flat and doesn’t have the charcoal flavour.
Tried some Michelin hawkers. All was normal okay, none worth any long queues. For every type I’ve tried, have tasted better elsewhere without any gimmicky stars needed. Just a marketing hype some lucky stalls get for no clear cut reason at all.
Michelin stars are for the westerns and most certainly does not reflect the actual authenticity of the original local standard. Just like the best hawkers grading the best pizza!
Watching this from Malaysia makes me giggle, Singapore markets itself so well, whereas Malaysia cooks well, but forgets it should also be a bit more extrovert and do some marketing it is actually the real thing.
Chao Chor vs Chao Zhou has a huge difference in meaning. Initially I thought he said "the fish soup is not Chao Zhou", as in the fish soup is not the usual teochew style fish soup. Only later did I realize he meant the fish soup does not have the fish stink smell. lol

My uncle used to own a fish ball noodle soup stall. He had the best fish balls and fish cakes. He gives up this business because he was having difficulty finding the fish, ( I believe potatoes fish) to make the fish ball and fish cake. He refuses to use lesser quality fish. That was in 1978. Hawkers are not grantee to find find the precise ingredients needed, and their overhead can increase anytime.
the wanton mee cannot compare with the ones in Malaysia - its 100x better and the noodles that are made in malaysia taste better without preservatives.
Hey Ghib OJISAN. You are basically eating Chinese food in these hawker stalls, and not really Singaporean 🇸🇬 foods. Your Pao Fan means rice boiled in soup. The Shrimp 🍤 Mee is basically Chinese shrimp 🍤 noodles. I would consider the followings to be local Singaporean foods : Sambat Stingray, Laksa, Popiah, Laksa, Chwee Kueh, Mee Goreng, Otah, …..etc, …..etc….
The Zhup Zhup food looks amazing. The price seem OK considering the amount of ingredients in their dishes. I am going there this weekend! 😊

You should ask for fish belly at Han Kee fish soup. It's really a different level.

Actually Han Kee provides lots of fish as compared to other stalls hence the super long Q. The soup is plain though. Enjoy your fish soup!

Maybe your Chinese has Shrimp noodles. But Singapore has our prawn noodles and it is definitely Singapore.
