Chef Skinner has such a deep arc and a lot of the things you pointed out were a huge focus in the sequel, Rata2ouille: The Perfect Dish, the world's ONLY Ratatouille-based personalike role-playing social simulation platformer hybrid game. Please do a successor video based on Rata2ouille, especially Skinner's changes during the True Ending route, I would love to hear your thoughts.
Personally, I'm glad somebody took the time to go in-depth with Skinner's character. To me, he's still a pretty evil guy but at least he's more lawful evil than chaotic. I mean, don't get me wrong, Remy deserved to pursue his dreams, but a rat is still a rat and if that rat is in a kitchen of a high class restaurant, then health inspection will shut the place down. Now EVERYONE is unemployed. The only thing that does separate him from being good is that he was using Gusteau's name to market cheap products for profit, which is disrespectful to the dead. This is personally my favourite Pixar film of all time and it's often sad with how often Skinner gets overlooked when talking about Pixar villains.
It’s not really disrespectful to make “cheap” food. 1) he’s making affordable food for everyone’s enjoyment.Even if it isn’t the same quality food you’d find in restaurant it’s still good food for an affordable price. Any sort of microwave meal isn’t gonna be good. In a sense it’s an advertisement so people enjoy the meal and go to the real restaurant 2)by making the 5 star quality food affordable for average people you are expanding your business to more customers so that you will make more profit and in turn that will keep carrying on his legacy. This move is really good at showing how villains are only made up from perspective.
I feel like it's a bit debatable if he wanted to use Gusteau's name out of a desire to preserve his legacy, or because his name was a very lucrative brand now. I think the implication is that he was very money hungry, and as such didn't really care about taking credit, he's fine enough managing the business side of things as long as he get's payed. Ultimately I think there's still a bit of his old self, but greed overtook him more and more to a point where Gusteau quickly became more of an idea and a brand for him than an actual person. While a lot of his actions can be seen and maybe to some extent might even have been as overall ethical, there was also a lot of very selfish desires driving them ultimately. So even when he was probably in the right, at least partially he was right for the wrong reasons if that makes sense.
That being said, honestly I do kinda wish he was more sympathetic...I feel that the reason why they didn't go through with it, is that it's already an uphill battle to justify why a rat was in the kitchen in the first place, as it does rely in a lot of suspension of disbelief. So if a more morally gray character was the one to bring those concerns up, the audience might have sided too much with them, instead of being fully immersed in this world where rats in a kitchen isn't just a major health hazard. I also think maybe he might have been more villanous to make contrast with Ego, which is portrayed way more sympathetically. I think they wanted to have Skinner just be the worst to highlight the more noble qualities of his co-antagonist, as in a lot of ways they're polar opposites. Great video though! Honestly I kinda go far with some of my defenses of him in the video since he's definitely a bit of a selfish character like you said. He definitely loses his sense of self as the movie goes on but it's also interesting looking at him as someone who is also getting increasingly more selfish while also losing his sense of self too.
In the deleted scenes, the ones where Geustou was still alive, Geustou showed that he hated hating his name on microwavable dinners but Skinner assured him that they selled. This brings to light the financial trouble of the restaurant that Skinner solved by expanding the business even if it was detrimental to their image. In the final film Skinner was definitely in the wrong as he used a dead man's likeness without permission.

Good video. Your takes near the end analyzing skinner's role as an antagonist does make sense in the general nature of the film, and how awkward he is overall. But to understand skinner's penultimate purpose in this film as an antagonist you first have to realize two things. Number 1 is that the film's larger theme is the passion of the arts. The second thing is how the two antagonists are combatants against said passion. Anton is a critic, his goal is to write scathing reviews and gate keep all of the culinary world to his liking because that is what people find exciting, even if it kills people's passion for the arts. Skinner however is the corporate hand that kills the passion. He'll tarnish the Legacy of Gusteau in exchange for perpetual profit. In some sense he is required to uphold Gusteau's reputation, at least as much as it is marketable, but frozen foods (regarded as some of the worst tasting food on the planet) is akin to taking the corpse out of the morgue and dressing it up. Skinner is going to fight and stop this new and passionate individual and his artistic rat because the new and exciting are a threat to his larger goals for the Gusteau name. He is necessary in the climax as the audience needs to see that genuine creativity can pierce the cold hearts of the critic and the corporate and help them back on the track of passion.
I would think towards the end, skimmer trying to get remmy to cook for him as keeping gasteus’s name could be him believing in his mad rage, that he was the only one left who truly wanted to uphold gasteus legacy as this lying, suspicious boy takes everything from him not even knowing the restaurants history. In his moment of derangement as his whole life falls apart, I think Skinner thinks making the rat cook is a last ditch attempt to save his friends legacy. All be it he’s a bit egotistical about it but what can a man do, he los this whole life to a rat, can’t say I wouldn’t go insane.
I love the apologism, his relationship with Gusteau was especially interesting. What is most funny about Skinner losing his sanity is that he’s absolutely right, ze rat is involved. The edit of Ratatouille without rats makes it seem like the stress has gotten to him and he’s snapped.

What is your opinion on the deleted scenes like "meet gusteau"? While they were obviously from very early in the development of the Film, but I think they Show what was Brad bird's original intention for gusteau and thereby recontextualize skinner.
Yeah just because he’s the antagonist doesn’t mean he is the bad guy. For example, if the Harry Potter series was narrated by Voldemort than Harry would be the antagonist even if he is the hero. Antagonist and villain do not mean the same thing nor do hero and protagonists
With the whole anger issues with skinner it's literally a French professional kitchen there's a lot of yelling watch hell's kitchen it's literally based on how French professional kitchens work skinner might actually be nicer outside the kitchen and work hours
Chief skinners seems to be from a farming and poor background, but worked very hard to get where he are just like Anton. Maybe his biggest flaw in characters has something do with that.
