So many mouths to feed hehe, I think sometimes it looks like I make far more food that we'd consume, but I don't buy anything else during the six weeks, so its kinda necessary. I'd love to be able to get it across to some people, I get some comments about the quantity of food (and how I must eat a lot of it ;)) but its hard to portray :D
I love meatball and sausage making day. I hope you will be able to get a new stuffer soon. You have given that one a workout. You are freezer rich to have meatballs ready to go. I have a ton of zucchini. I need to make some cupcakes or bread. You are a wonder in the kitchen. I think it is wonderful to see a Mother provide for her Family. I love watching the kids pitch in. To Homeschool children, the benefits is that they understand where food comes from, how to prepare, and store. Budgeting and using every bit. Home economics is a forgotten trade. Your kids are only around for 18 years, love them every minute you got them. Teach them good lifetime skills. Thanks for sharing it all. Love every minute
I love having meatballs in the freezer, it is so easy to make so many meals from them! We might see if we can replace the seal first before we replace the whole thing, FX we get a bit longer out of it! :D
I love meatballs, I had them last night too. One time during a freezer tour you mentioned how you like to pop them on pizza so I make double the portions now, another game changer 👌
They work perfectly as a pizza topping! I love having things in the freezer that can be served so many different ways, that way I can choose how I want to eat them! :D
Are you not able to maybe just clamp the stuffer with adjustable clamps to the table to secure it and still allow it to be removed for cleaning etc? I had a large pastry board which moved around and I used builders clamps to lock it down and it worked great. Just a thought
Do you know, I had the same idea, I bought some clamps at Bunnings last week, we went to clamp it to the bench, and they were too small lol, they wouldn't reach over the lip of the bench and the sausage stuffer!
@@OurSmallFootprint maybe next time you go, talk to the hardware pros in the building department ..there are all sizes of clamps…take the measurements of what is needed…width and length as well as if there is a lip of sorts on the table it would need to go around …I’m certain they could fix you up with something that would work. Depending on what they recommend, I don’t know about cost but since you use it so very much it might be worth it.
I've made it a second time and will make it again today, so I will have a video with it properly shown probably on the weekend! The kids really like it and I can freeze 800g portions of zucchini and use it for more or for other things as well! :D

@@HomeLifeAus this one is more of a sweeter bread than savoury, you could drop the choc chips though and it would be less sweet! But just with a bit of butter/ghee is lovely! I actually think lemon curd would probably be really nice too! A wonderful contrast of flavour
Did K mart have different versions of the liners such as for a square cake tin? Also the next time you smoke meat I was wondering if you can give a bit more in depth explanation of how you use your smoker (chips etc). I inherited my Dads smoker which looks very similar to yours. I used it a couple of times but Im always unsure of what Im doing.

Oooh, I'll have a look, it might be similar to what I ended up with! I hated that so many of the bread recipes just didn't have much zucchini in it, but I had to really alter the quantities to get the texture right! :D It is so worthwhile though, but yes, a lot of work, so many meals from a cheap cut of meat though! :D
Those "caramelised " meatballs are just perfect for me. Lol. I like all my meat very well done. Haha. I know , apparently I'm committing some crime, according to my lot. Hi Nyssa, You could make a sausage and egg omelet with the balls (the only omelet I will eat unless it's fried bologna and scrambled eggs). Put it on pizza. I made chocolate zucchini bread last week...goood! Only it's a keto loaf because I don't take in a lot of carbs anymore due to health issues. I've lost 40 pounds in the last 3 months so it must be working. Two questions: Do you ever get time off from all this kitchen work, like does Darryl evedr cook dinner? And how many hours/day do the kids have home school? I chuckle every time you say how cold it is there because in a few months it will be -10 degrees F (-23C)...my kind of weather.
Yes, Omelettes with the sausage mince, Delish!. We did keto for a while there! D lost a whole lot of weight on it and did really well, unfortunately nothing seems to make me lose weight, we did it for over 12 months and he kept dropping, we did the Whole 30 for 90 days too and he dropped, but I weigh the same as when I fell pregnant with my first baby 15 + years ago lol. By doing what I do in the kitchen, it means D can make meals all the time from the stuff I've already prepared, which is great, spend the day in the kitchen and he 'reheats' me a meal from stuff I've made ages before. I'm a little fussy, I really like my own food hehe. The kids have to do a minimum of 2 hours of 'schoolwork' a day (the older kids more as they have more project work etc) but we do a lot of learning/teaching throughout the day in other aspects as well, we also don't do school holidays, we just school all year round, though in summer when the garden is full sometimes we have days where we learn about life cycles and veggies and stuff and not 'book work' hehe.
Nyssa, I have an underactive thyroid, which means I only need to breathe deeply in a cake shop to put on weight 😅. I only need to eat every 3 days for my super slow metabolism. I later developed type 2 diabetes which means I have to eat regularly. I have stopped eating from dinner plates and eat from side plates instead. It does help with portion control, I have lost 30+ kilos over the last few years. Cutting the sugar in recipes by 2/3rds is great too. My family don't miss the extra sugar, in fact they prefer it. The zucchini bread sounds delicious, I love walnuts. ❤

I’ve come to terms that I am how I am :). We definitely reduce that sugar, I rarely snack and my portion sizing is moderate, not willing to do much else! Heh

Did you see Jessica from three rivers….recently vlog where she salt preserved egg yolks?When fully cured, she grated & used on pasta as it replicates parmasen cheese (since we’re all dairy free). Thought you could look into it since you have your own eggs.
I did! Someone else mentioned it too! I will definitely have to give that a go! I bought a 5kg bag of salt too, so I'd have enough to put aside to use and dry for this purpose :D
Also if you don't drain the zucchini it adds some moisture into the bread while cooking and that may help the crumble. I never drain mine. I shred and mix right away.

I will, next time I make it, the kids adore it, so they'll be happy for me to make it any time, I have cashews again now, I'll soak some and get that made again too, they love spreading that on their flatbread before putting their toppings on!
Lol, we have definitely had a glut this year! I'm glad I found a variety of ways to eat them/preserve them rather than just straight apples, the apple butter barbecue is delicious!

It was a 3 pack with one loaf and two circles I didn’t see any others! I’ll have to have a look if they have square ones!

The jars are perfect for garden season, gets to 6/7pm, still daylight, have dirt all over me and haven't started dinner! hehe.

I think it really depends on the zucchini too, some are really wet and some less so!
It wasn’t crumbly at all when cool either, so a lot of it was my trying to slice while warm hehe
But who can wait til ots cool? I have been making some each week and I can never wait😂

If you want try adding some banana to the zucchini bread for the sweetness and works as a binder makes a nice moist loaf :)
