I made paella for the first time in my life with this recipe, just subsituted tuna for chicken, left out the lima beans (couldn't get any) and added shrimps on top of the paella near the end of the cooking time. My family was blown away with the result, and myself even more so (I'm not know for my cooking abilities as I very seldom cook anything). Even managed to get the socorrat caramelized rice right! Huge thanks for the recipe, simple and easy, and yet such an impressive end result!

I own one but usually use a large Le Creuset braiser (more leftover lunches!) - and yes, it cooks more slowly than my paella pan. I always feel that it's not the pan, it's the flavor. Yes a paella pan gives you perfect soccorat! Love you addition of rosemary. Don't want to disturb the rice once cooking. That is a great tip, Albert. Oh that tuna looked so good. Your paella looked good enough for me. Deep brown soccorat, light golden soccorat, it is all good brother!
Great video Albert. I wanted to do Paella but I don't have the pan so this is a great recipe. Do the Lima beans or butter beans have to be frozen or can you really just use them fresh from the jar? Thanks.

You can totally use the jarred lima beans here, they just sell them frozen here in Spain, cheers
