    The least amount of ingredients. I love that. So many recipes with 100 ingredients, and here simplicity is the key. Ballo at the Mohegan Sun is the same way.

    Most Italians use soaked stale bread in milk as the binder. But they look good.

    What they don't tell you:
    Tip 1. Buy the best quality meat you can get, as in prime ground beef. Use good plain bread crumbs not seasoned blue can product. Use good plain pecorino Romano cheese, NOT Locatelli.
    Tip 2. Per pound of meat, add 1 large egg, about 3/4 tsp kosher salt, 1/8 tsp each fresh black pepper, onion powder, garlic powder. Or use sautéed garlic and onion instead.
    Tip 3. Add msg source like stock or bouillon powder, or msg powder. Chef secret.

      Do not buy prime ground beef. Prime is graded on marbling. Marbling goes out the window as soon as it's ground. I buy a whole brisket and grind it myself. Better flavor than ground chuck imo. Usually turns out around 75/25 depending on if I feel like trimming any fat or not before I grind. I dont get any weird pieces of gristle when I grind myself either.

    My mom and Nonna and zia all made meatballs like that. But no lie, my mom no longer makes sauce (expect some holidays) and uses Raos now instead, they always have extra jars.
    I can’t imagine those meatballs with fresh made Raos!

    At 1:50 Frank pretty much is telling us he's not sharing the full recipes in his cookbook under the guise of keeping things simple because naturally, anyone purchasing his cookbook would be a simpleton incapable of following instructions on how to make a meatball!

      They use water instead of milk they probably did add garlic but they didn't put it in the video.

      Couldn't agree more, Marie Bella! I'm full-blooded Italian with both sets of grandparents from Italy, and if we didn't add TONS of garlic, Italian bread soaked in the milk and seasonings, then it's not ITALIAN! LOL

      Maybe in US ....... the meatball ( POLPETTE ) are without garlic nor Milk! Another thing... my grandma gave me meatballs when she didn’t have time to cook! The most stupid dish in the world

      These guys are a throwback. When I was a kid we went to Manhattan a few times a year to eat at the real Italian places. No menus. Singing, laughing, eating and drinking like it’s Christmas with your family. I just hope the traditions continue.

      I do believe at some point they used Marca Francesconi tomatoes. But the only place that seems to sell them is a place in Brooklyn called Teitel Brothers.
      They either have a commercial connection or they've changed brands.
      Either way, I can make a marinara sauce just as good. I use Cento San Marzano tomatoes, a good deal of olive oil, some minced onion, minced garlic , salt, pepper, basil and oregano, and a secret ingredient that I'll keep to myself. I then reduce it for an hour and a half to two hours. Then I pressure can them, and make a dozen or so quarts to use throughout the year. Just as good as rao's.

      Yes, most of the supposed Rao's meatball recipes that I've read online include water. I don't think they gave away the full recipe.

      The recipes that are online are not the same and WILL NOT give you a true RAO's meatball....yuh meatballs!

    They use every day run of the mill ingredients. So why is it so expensive and so hard to get a reservation?

      Italians get the best meat and cheeses. During the coronavirus scare my local Italian butcher had anything I wanted. Never a shortage.

      My titi Suzy or my aunt went to rao’s once and said it’s phenomenal she said They only allow close friends and family to visit their restaurant so it’s really challenging to get in this restaurant it could take years until you are able to eat there but you can still buy their signature tomato sauce which u can find at your local grocery store

      They don’t take reservations. There are 4 tables and 6 booths there and the tables were designated by the owners to friends and family generations ago and passed down to their families over the years. The only way of going there is if you know someone who has a table and isn’t using it that night or occasionally an owner of a table will auction a night at Rao’s off for charity. I believe the bar is first come first serve but it’s very small. The entire place seats less than 60 ppl. As of last year they started doing delivery and they also offer take out.

      Oh, couldn't agree more, Joan! I'm watching this and saying, "TIE YOUR HAIR BACK!" ANY great cook knows this. She's on camera, so her looks were more important than making food that people are going to eat. It's quite gross.
