📝 Ingredients:
• 3 bell peppers (any color)
• 3 thick slices of ham, chopped
• 5 spring onions, chopped
• 1 red onion, chopped
• 3 eggs
• 1 cup mozzarella cheese
• ¼ cup parsley, chopped
• Salt, pepper, and chili flakes (to taste)
🍽️ Instructions:
1. Prepare the Peppers:
Cut off the tops of the bell peppers and remove the seeds inside. Lightly oil a baking tray and place the peppers on it, standing upright.
2. Fill the Peppers:
In each pepper, layer the chopped spring onion, red onion, and ham. Crack an egg into each pepper. Season with salt, pepper, and a sprinkle of chili flakes for a kick. Top with mozzarella cheese and chopped parsley.
3. Bake:
Place the tray in a preheated oven at 220°C (428°F).
Bake for 40 minutes, or until the eggs reach your desired doneness. For runny eggs, check sooner; for firmer eggs, bake a bit longer.
4. Serve and Enjoy:
Carefully remove the peppers from the oven, let them cool slightly, and enjoy your cheesy, protein-packed stuffed peppers!
