This soup is called GAENG RANJUAN old recipe from royal palace at king rama 5 era ,made accidentally by the princess who saw left over food and ashe mixed those food together and turned to be this great menu .

I have several of those seasoning in my backyard and kitchen, but what is that purplish ingredients before palm sugar??? And I've never seen citrus that big before, or the seemingly equivalent in my country is cute and small thing... There goes my will at trying to cook this. Too many unknowns :(

Ingredients in order of their appearance on screen. A couple is my "educated" guess so please correct me if you're sure it's something else. Fresh pineapple Sliced beef Coriander root Galangal ½ inch slice 4 long pepper 6x thin slices of galangal 2 long pepper Approximately 20 garlic cloves 6 shallots Large handful of chilli 2 lemon grass Shrimp paste (I think) Palm sugar Most likely to be roasted rice powder (have also debated before as coconut or salt) Thai Pomelo/Grapefruit Stock Thai Basil Kaffir Lime leaves 2 Lemon grass 7 slices Galangal Fish sauce Kaffir Lime leaves Lime juice Broccoli leaves (I think) Coriander Kaffir lime zest Garnish: Thai basil Lemon grass Chilli Coriander
I believe what you thought was Himalayan salt was either grated coconut or roasted rice powder. It definitely wasn't salt, because the shrimp paste is super salty already and adding salt in that amount would absolutely ruin it.
@@rhizomorph-music I think you're right. I've only associated coconut and rice powder with a white/brown/grey colour so never occurred to me that they can be pinkish. After doing some googling, it certainly looks like roasted rice powder. Nice catch.
The marinade consists of: koriander/cilantro root galangal long pepper (poper longum) fresh pinapple juice (to tenderize the meat) Paste: toasted slices of galangal toasted long pepper garlic Asian shallots red and green bird's eye chili slices of lemon grass kapi (shrimp paste) palm sugar salt (not sure, but I hope it's not MSG) Crush all in a mortar. Juice a Kaffir lime. Heat oil in a wok and stir fry the meat without marinade for a few seconds. Add paste and keep stiring. Pour in some tomato sauce (?) und light meat stock. Add some Kaffir lime leaves without the stem. Then some mor lemongras (cut at a bias) and slices of galagal. Next brown sugar (or granulated palm sugar) and fish sauce. Some mor Kaffir lime leaves and Krapao (Holy Thai Basil). This is not the "Sweet Thai Basil" with the anisy flavor, but a rather robust herb with a slightly peppery/all-spicy taste. Now comes the lime juice, some chopped fresh koriander/cilantro stems and grated Kaffir lime zest. Serve in a bowl, garnish with more lemon grass, fresh chili and koriander/cilantro. Don't eat chunks of lemon grass, galangal or lime leaves - they are just there for flavor.

I am pretty sure to know what it is, but I only know the german word, it is called "Schale", and there is a Oberschale and a Unterschale, an upper and a lower part. Maybe in spanish its called Nalga de Adentro. It is from back part and sits below the hips and needs to cook for a while. But what I can tell you for sure, is, that this person is not skilled when it comes to cutting meat, and the knife is not really sharp.
