Also try mixing in strips of pre-soaked rice paper to your dough just before you are finish kneading it. it will give it a more meat-like texture mimicking fat or sinew.

Hello! I actually tried smoking these on my stovetop smoker. I seared them first and then gave them 20 minutes in the smoker before steaming. They smelled really good but the smoke definitely overpowered the whole dish and left a very strong lingering taste in my mouth for hours.. dough is porous, not dense like meat so I guess it just soaked in all that smoke like a sponge. Needless to say, I ended up throwing it away, it was just too smoky and bitter. All my hard work 😭😭😭 So I would say pass on the smoker and maybe just add a couple tablespoons of liquid smoke to your steam liquid to give it a subtle smoky profile.. hope this saves you from wasted product!

Your videos are absolutely amazing and you are getting a following very quickly. I would recommend that you invest in a better microphone if you wanna improve your videos. I don't think you need a camera upgrade just yet, however, a camera stand of some sort (a makeshift DIY works totally fine for the most part) would really increase the production quality as well. Don't get me wrong i'm not trying to bash your video production. I simply wanted to help and advice since i really enjoy your content.

Seitan is the gluten/protein that is separated from dough. You do this by washing the starch out of the dough. You then season the dough and cook it. It’s very tasty!
Any way I can cook the seitan in an instant pot? I tried your sticky bbq rib recipe without tofu and they were wonderful. I don’t really have a dish deep enough
I honestly think it’s all the seasonings I use that mask the gluten flavor. I had my omnivore brother try it and he said he didn’t taste the gluten flavor at all. I do plant to make a WTF version of this soon 😉
D K, if you’re using Bob’s Red Mill brand, that’s why you get that strong wheat taste. That brand had a huge amount of protein, I think, but someone in a seitan group I’m. In wrote that the amt of protein has been reduced. Therefore, you may not get that wheat taste if the protein was reduced. HOWEVER, I would triple and quadruple the spices and seasonings when I used the Bob’s brand, and I still got that wheat taste. I switched to Anthony’s brand now, and I don’t get the wheat taste.

I once added too much vinegar, and I could taste that. I finally switched to Anthony’s brand, and I don’t get that after taste. But, the new thing is washing flour, and with the first washing, people save that water, and make bacon and pepperoni out of it.

I normally use 2 1/2 cups of VWG to 1 to 1 1/4 cups of water/liquid. It takes 1 to 1 1/2 hours to cook depending of the size of dough ball. Smaller pieces take 40 minutes to 1 hour to cook.

In other words, you can have your meat and eat it too - without cruelty and health-risk.

Put a bit of vinegar in your wet mix. It somehow helps with the taste.
