* TOOL: One spring form 16 cm in dia. and 9 - 10 cm high
* INGREDIENTS:
A. Chocolate mousse
4 g gelatin (sheets or powder)
20 ml cool water to soak gelatin
90 g chocolate 45 - 55% cocoa
60 g (about 57 ml) whipping cream (to melt with chocolate)
125 g (about 121 ml) whipping cream 30 - 40% fat, to make whipped cream
B. Strawberry mousse
4 g gelatin (sheets or powder)
20 ml cool water to soak gelatin
180 g strawberries, fresh or frozen (thawed in fridge)
40 g sugar
10 ml lemon juice (optional)
125 g (about 121 ml) whipping cream 30 - 40% fat
C. Vanilla custard mousse
4 g gelatin sheets or powder
20 ml cool water to soak gelatin
1 large egg yolk (18 - 20 g)
25 g sugar
10 g corn starch or AP flour
125 g (ml) milk - lukewarm
½ tsp vanilla extract
110 g (about 107-108 ml) whipping cream, 30 - 40% fat
