    I love adding my elderberry syrup to my kombucha. Adding fresh strawberries to kombucha for a second ferment is great, too!

    I've been making water kefir for about a year and a half. I make a gallon at a time. I ferment in sugar water for 2 or 3 days. Then pour the water off in to jars with some juice and ferment for another 2 or 3 days. I let my grains set on the counter with no water for a couple of days until I need to make more. Then I rinse the grains a few times then add sugar and water to start the process again. Or long term in the fridge with sugar water. Its very forgiving.
    Ginger bug soad is my favorite, it gets soooo bubbly and carbonated. Its so easy to do and can keep in the fridge without feeding it for a while. When you feed it new ginger the frst batch has a little more stronger flavor of ginger. I pour in to jars with juices or fresh fruit and it ferments so fast & is so carbonated.
    Pineapple Tepache is also an easy fermented drink to make.

    I've started with a kvass recipe of beets, oranges, and ginger. Turned out really good.
    Currently trying ginger bug to make real ginger ale.
    But kabucha made from tea sounds interesting. Have to look it up now. Thanks 😊

    Kefir soda starter culture from Cutting Edge Cultures. You make the soda with fruit juice that has no sugar. It is the best soda pop ever!!! My kids drink it all the time. It is super bubbly!!!

    Adding 1/2c either water kefir or gingerbug to a gallon of lemonade and letting it sit room temp for a couple days (depending on temp) makes a great drink.

    Citrus is your friend. When you want a little sweetness to your lemon drinks put some raw honey in there or put a little orange pulp in your lemon water
    That would do me, but im happy with simple things

    Sometimes I will pour Seltzer Water over a sprig of Peppermint from the back yard. The biggest hurdle I have is the desire for sweetness without sugar. In the end I think the only real solution is to retrain myself to not crave the sweetness.

      Try kefir it will literally change your cravings if you drink it consistently your cravings come from your gut bacteria if you feed it sugar it's gonna want more sugar but kefir will kill the sugar craving bacteria and yeast overgrowth in your gut. It's amazing and you will even sleep better. Gotta make it at home though look at donna schwenk she Is like the fermented food queen.

      Mead is much higher alcohol and is primarily made from honey.

      Also you could use stevia leaves along with the herbs. It’s a natural sweetener. And using the fresh leaves isn’t processed. Monk fruit is another alternative.
      If you want to cut down the sugar what you can do is use slightly less and less over time and your taste buds will adjust.

    I was only an occassional soda drinker, but stopped completely in my 20s, almost 40 years ago. I make lots of water drinks with fruit, herbs, veg, berries with part herbal tea, coconut water, and/or Q tonic, which has no hfcs. I also add extra Spices with matcha, and ceremonial grade cacao. I brew a tea and add those to it. I make golden milk with extra supplements.
    I add my water soluble supplements to
    The waters, some days with juiced lemon, lime, oranges etc. mixed in. I add all my fat soluble supps In an avocado smoothie in the evening. I use Monin beverage syrups,
    Which are made with cane sugar, 24 cal per
    Serving. I dont use a full serving. Thats all
    The added sugar in my diet. If I need sugar
    In cooking, I use monk fruit sugar.

    I started drinking Ollipop if I feel like having a pop. (I thought calling it soda was a southern thing, but i know your from the PNW, as am I)😊

    I'm picky about my store bought kombucha. Synergy is the brand that I buy. It doesn't have added stuff and it's not watered down. The first time my 8 year old tasted it he downed the whole bottle. I've left it in the fridge and it's gone flat. I left it and it came back fizzy again and was just fine. I haven't had homemade. I think my house is too cool for it to do what it needs to do. I have the same problem with sourdough. It just doesn't want to do it's thing.

      There are heating mats available to keep it warm. We wrap Christmas lights around ours.

    Was there ever a study done showing how much sugar is left in water Keiffer after it’s fermented?

    Can you use tumeric in place of ginger in a ginger bug or add tumeric to it?

      It would be similar but not the same as the ginger but absolutely you could.

    Caffeine is the healthiest ingredient in soda, but obviously not intended for children. Children should not be drinking soda ever. Soda is fine for adult in moderation (~1 per week), but try to do like the Mexican kind with real cane sugar.
