    I am a doctor who has been expressing these facts to my patients for years. If you understand the physiology everything that she said is simple and predictable. An important fact not mentioned here is that cholesterol is not a fat, in reality it is an alcohol, which means that it is water soluble. Therefore it can NOT collect in the blood stream. Plus saturated fats are not capable of picking up oxygen due to their make up (no open carbon bonds) so they can NOT go rancid. Rancidity is a primary cause of oxidation, it is why so many people take anti-oxidants. Polyunsaturated fats on the other hand are loaded with open carbon bonds just hungry for oxygen to come along and attach. Lots of oxidation and rancidity. This of course leads to oxidative damage and at its extreme, disease.
