Mushroom risotto is my all time favourite and I'm glad you said this is your take on it... It's close to the traditional way but in no way the traditional way of making risotto... however, I would like to make a suggestion for you. The next time you cook risotto... make sure the final product has a more creamier feel... it should be in between a porridge and a regular boiled rice consistency.. so a bit more stock right at the end and leaving it to sit off the heat for few minutes will make a big difference to the final product. Also you should try frying the mushrooms with a bit of garlic butter instead of just plain butter..I promise you..you will never go back. Thanks :-)

my darling that's no way of cooking risoto as in Italian way. I'm so disappointed the way you cooked and teach people that's it's an Italian mushroom risoto. it's look more Indian mushrooms rice pulao then the Italian risoto.
I agree with you Equality Equality when you say this is not the correct way of cooking risotto. This is by definition not risotto since Wine is not optional, it is required. Traditionally it uses Dry White Wine but even the many varieties like Milanese or Venetian Squid risotto use different types of wine. She also adds the stock in way too fast and if they add cheese you have to use a firm one (like Parmesan or Romano) which she did but she also included processed cheddar but if you don't use cheese use none at all. Also, a vegetable stock will be bland and dilute it. If it was made to be vegetarian I would suggest adding something deep to it like Miso Broth with Nutritional Yeast. It's disappointing as she has all the resources but she doesn't make it correctly but it doesn't look like pulao at all.
+Rachna .r Ruchi has used salted butter to sautee the mushrooms so that they do not taste absolutely bland. Also, the Risotto was already seasoned enough & therefore, the chef decided to go slow on the seasoning of mushrooms since they would anyways get mixed with the rice & seep in the flavours.

sorry but its wrong the mushrooms should be a bit cocked in a resotto so that would release a test in resotto ,any how well tryed.
