Got a pro tip for you ! Get a medium sauce pot and dump your liquid in then add your spices and brown sugar to the pot along with your cure #1 heat it but do not boil ! Remove from heat and Let the seasonings bloom for 30 minutes . Pour into your meat vessel stir it up and let it soak for as long as you prefer then squeeze it ! Dehydrate or if you have one like me hang it on racks in a jerky house and cold smoke it for 4 hours then let it dry my jerky house is 18’x30’ and yes i am in the business !

One of the reasons for marinading it longer is for tenderness. Those were a little on the thick side, 1/8" is about what you want. The marinade sounds real good , I need to try me some dales.

Round steak is okay if it is top of the round, bottom of the round is tougher and you won't enjoy it as well, and a little liquid smoke or hickory smoked salt.

nah bro. you can def reuse marinade. i keep my jerky marinating under 50 degrees also and then toss a new batch in it right away after im done with the initial one. add a few more spices, herbs, salt/sugar, marinade for 12 hours then dispose. i wont go pass 2 uses but im sure i can get 3 total if i tried. been making it this way for a decade or so. no weird off taste, people getting sick.. nothing! its all in the cleanliness and preservation method as well amount of salt/cure used. i rarely use curing salts though unless i need to preserve my jerky longer.

You're missing liquid smoke and I use real onions and garlic. It marinates over night in the fridge and 1 to 2 days in the dehydrator. I have the best damn jerky recipe.

Place in wide mouth gallon containers. DO NOT ADD SALT BREEDS MOISTURE. the spices will clump. THIS IS NORMAL KEEPS OUT AIR. SCRAPE AS NEEDED. No spice can beat this. Secondly, buy CITRIC ACID GRANULES. Mix in water use as needed. It's a lifetime supply of lemon basically All dishes benefit from citric acid.

Sarah Philips Made my own concoction. With jerky it’s trial and error. Experimentation mostly. The Dale’s steak marinade made all the difference.
