Normally Persian foods are not heavily spiced but this kofte features variety of herbs and spices. We love it with lots of herbs and normally we use fresh herbs but I couldn't find all of them here in the Netherlands so I used dried ones. You can use whatever you have on hand but use combination of at least 3-4 herbs and spices. It's sooo good, you will love it!
