Bearded - you were the guy who introduced me to this great hobby and I thank you brother. I’ve made close to 100 gallons of cider and learned from you along the way to improve my technique. I have four recipes I’ve perfected and used for my nieces wedding if you’d like to let me know which one sounds best to share… strawberry, lime, mint; blackberry, honey, lemon; tart cherry, honey, apple; and my absolute favorite: my orange creamsicle that will actually take you back to your childhood.
George got me started and you, Jesse & Beaver keep us raising our games so thank you, mate. My big 'tip' for wood aging in vessels is make friends with your local joinery factory to get their off cuts, season 12 mths, toast, and char then start @ 60 to 65% and I drop proof by 1% with water every 2 months. I use beers kegs in my roof with bung and airlock (no fluid) which keeps bugs out and breaths. Amazing results.
tip: Even in a reflux column you can hang a bag of botanicals for flavor in the column from a filter screen gasket or stacked on top of the copper mesh (keep it loose)
I loooove your channel - and like the T-shirts too. I do hypothetical distillation on my AirStill... and recommend adding 2 to 4 copper sponges to the distillate if there are sulfates to be removed in connection with the 100p hypothetical distillation 🙂
I did a blackberry wine then used the rest to make a “hypothetical” fruit mash with sugar. If I did it again I’d pick more and go for a pure berry mash. I was only working with 15lbs. I’d also maybe try a gin basket packed full of berries. I put it on fruit as well and came out tasting like bb jam. Thanks as always Bearded!
That blackberry was awesome. My liquor fairy friend did rather well with one that aged a month with the berries. Can't wait for this year's blackberry season!!
Got a blackberry patch in my backyard, picked about 40 lbs. last year. Bulk aging my 2nd 5 gal. batch of blackberry wine right now. Wish I had a liquor fairy. But I ‘d settle for a t- shirt. Big howdy from Oklahoma! Made some blackberry jack from my first batch, only thing I can remember is it tasted delicious!!

last summers were just too dry for a decent (wild) blackberry harvest around here. Quince, sloe and green(!) walnut been the go-tos, each with some vodka, lemon and brown rock candy. The fourth setup last year was sloes in gin. Everything still on the fruit, should find some time now to bottle... and taste...
Tip: Don't go to big starting out with this craft. 5-gallon batches are perfect size to experiment and perfect recipes without costing allot. Stick with one recipe before moving on--research it thoroughly--keep good notes. You can always scale up--once you get it dialed in.

I would say the best tip to give to people so far. Is don’t worry about clearing out your mash. Before running it. If it’s cloudy or little floaties. That’s fine. If you wanna strain it. Go ahead but it’ll be fine and will not affect run. Unless there is a bunch of chunky stuff like fruit or grain. Hope this helps.
so, my distilling tip is this, I made a 5 gallon batch of Birdwatchers, but instead of yeast, I added about a half a cup of sourdough starter just to see what would happen. Fermented fine, and the result was pretty tasty for a sugar wash. Bought some vanilla beans off amazon to age it on, and now have a lifetime supply of kick-ass 130 proof vanilla.
Love the info, recipes, and demos. Try toasted applewood to age white spirits. Toast at 400’F for at least 90 min. Mix and match with toasted or charred oak.
I have enjoyed all of your videos. Which has made me try different infusions with fruits and spices. So thank you my friend. Also here is my infusion for strawberry&peach vodka. I used 80 proof vodka that I made. ( you can use any vodka for this) cut 1 pint of fresh strawberries and half next take six peaches cut them into quarters, half gallon mason jar put the fruit in the mason jar. Pour the vodka over the fruit. Add 2 tablespoons of honey seal the jar shake that sit in the refrigerator for one week strain do you have a beautiful strawberry peach vodka. You can add three fresh strawberries and one peach cut up presentation jar for appearance
Into the AM has the best shirts. So soft and flexable. I got my buddy that Octopuse one and my wife one for christmas cause everyone loves mine so much. I am currently working on a cider using the omega Sundew yeast. Hoping that it makes it taste like strawberry apple cider.
I've been working on meads lately, my first batch came out at 15% abv (a little high for what I want) so I started doing a pound and a half of honey per gallon of water for about a 10% abv. First batch I did .75 pound per gallon of dried blueberries, turned out real nice just a high abv, this batch I put 1.5 pounds of honey with the same .75 pounds of blueberries but I added a whole vanilla bean, I'm hoping for a subtle vanilla with a blueberry mead heavy flavor. I also did a pineapple ginger, kind of winged that one...

Hey Bearded. 🤤 Birdwatchers made to Odins Gin Then take 1 liter, put 500 g of Sloe berrys and 250 g sugar in. Let sit for at least 3 month. 🤪 Just made a wash of barley, corn and honey. 1/3 gravity point of each, for an 8 liter whisky barrel. "hypothetically" that is 😉 Happy Distilling 👍
Just a friendly reminder hows the cherry bounce idea coming along. I made some of that with everclear it's been just chilling in my fridge for like 8 months me I used 1500 ml 95 proof 5 pounds of blackberries and 2 cups of sugar and sat in a jar for a month and a half then strained it off

Bearded started following way back when you clearing that "forest", fell in love with your personality and vibe. No recipe but a tip though, be careful with cinnamon sticks in the pot while distilling with electric elements. It only takes one stick to lodge in the element, especially those ripple ones to ruin the run. Also any news on George of Barley and Hops Brewing? George, Jessi, and you rekindled my alternative high-school hobby while I watched SG-1an have helped me improve my techniques greatly, please keep it up.

Oh man, that looks so good. I'm going to have to go blackberry picking this year. I bought that same shirt you are wearing and 2 others using your link during their black Friday sale. It is my favorite shirt, followed closely by the shipwreck in a bottle and the first Stillit collaboration shirt. OK, for extra points, since you mentioned ginger in gin... 2.25l neutral at 43%, 15 grams juniper berries, 8 grams coriander seed, 6 grams lemon zest, 2 grams lime zest, 2 grams ginger, 2 grams orris root, small pc cassia bark and 16 grams cucumber slices. Maserate 24h, remove the citrus zest, and put the rest in an air still... Delicious Gin, I'm going to try the same except Sub tangerine for lemon and lemon for lime when I can get some fresh tangerines, maybe a bit more ginger and cucumber because they combine to give it a really nice fresh taste.
I have been making Blackberry Brandy for years out of bought Vodka, I use a gallon Jar add 60 of Vodka 1 cup of Berry Sugar and top off with Blackberries and leave for 3 months, it’s epic for sure, interested to know your mix. Now I have just started distilling and can’t wait to try making it from my home made liquor.

I recently "hypothetically" made an experimental run. Used 3 cans Bacardi frozen strawberry daiquiri concentrate, 3 cans of the Pina colada, and 7lbs sugar. Some DADY and a touch of nutrients. Let it sit for a week and gave a stir every day. Added some of the blend to my mason jar thumper, and ran it. The flavor was there, but wasn't the PUNCH I was hoping for, so I decided maybe it was better to be a cocktail, but what to use? I let my pot sit overnight to cool off, went to dump it the next day, and the smell of the backends was heavenly. I took a little sip of it, and it was incredible, so I saved about a gallon of it and went to the store for a bag of frozen strawberries. I muddled the strawberry and made a simple syrup from them (bottom of a mason jar, coated in sugar) , filled a quarter jar 200ml of spirit, filled with the saved backends to the 700ml line, topped it off with the strawberry simple syrup and threw in a few berries, let it sit overnight, and it was incredible. My wife doesn't even like alcohol and I couldn't keep her off of it. It's one of those ones you call dangerous, because we couldn't stop drinking it. In hindsight, I should've added some strawberry syrup to the thumper, something for more flavor in the spirit, but all in all, I'm stoked with what became of it. This was for a 5 gal run, and I did invert the sugar.

So this started as blackberry wine and the liquor fairy distilled it into a brandy/liqueur/cordial? I absolutely love blackberry anything. I don't have a distilling tip, but I do have a question - what yeast did you use to ferment? I'm assuming ec-1118, but want to be sure.
Just made a pint of blackberry brandy still not ready for another 2 or 3 weeks left. I used frozen BlackBerrys and I think a half a cup of sugar. If it turns out will maybe make a qt only using a cup of sugar. Made a qt batch using I think one cup of sugar with vodka and made a qt. batch with brandy. I thought maybe the one with brandy would taste like blackberry brandy I only left it for almost a week. So I don't know witch one is going to taste like black berry brandy.
Love your videos, I started making hard cider following your instructions. I use what we don't drink to make BBQ sauce and in a chicken marinade I like to do!
Good stuff bud. I did a little testing in my 1 gal outfit making a vodka. After first run, I flavored it with blackberry concentrate I got from Olive Nation and let sit for a few days. I ran it again and there was a nice touch of the flavor in it. I used your discount at Olive Nation and saved a buck or two. ;p)

Looks awesome, and dangerous. If I ever get into distilling I'll definitely make booze like that. Closest thing so far that I made were a 16% ABV Berry wine (blackcurrant, redcurrant, raspberry, blueberry, huckleberry, blackberry) aged on oak for 6 months. And a Berry bomb mead with the same berry mix and cacao extract (fortified to 21%ABV)

Thanks bearded, I have tried making a Cointreau inspired liquor by hanging oranges above the neutral spirit. Put 500ml of high proof spirit in a LARGE container and then wrap 3 oranges in butchers twine, leave a long enough tail on the twine to hang the fruit just above the spirit, leave fora couple of weeks, depending on strength of flavour you want. The spirit will evaporate, then condense on the orange skin, oils are leached out and drop to the spirit below. Mix with sugar and water to dilute, it’s delicious. To be fair this was inspired by a recipe by TH-camr cuoredicioccolato

Mr bearded and bored I got a quick question for u sir. Jesse from still it made a whiskey using a cake from a box. My question is: can u mash in the cake as is, in it's powder form, or do u think it must be baked into a cake first in order to be mashed in? I hope that makes sense lol

Tart cherry of course for the first gallon, but I'm thinking pineapple of all things for another gallon. I'm guessing that it will play really well against the apple. Distilling tip.....always boil your copper mesh for 50 minutes before you put it into your into your colum or sight tube.

I recently "hypothetically" made an experimental run.
Used 3 cans Bacardi frozen strawberry daiquiri concentrate, 3 cans of the Pina colada, and 7lbs sugar. Some DADY and a touch of nutrients. Let it sit for a week and gave a stir every day.
Added some of the blend to my mason jar thumper, and ran it. The flavor was there, but wasn't the PUNCH I was hoping for, so I decided maybe it was better to be a cocktail, but what to use?
I let my pot sit overnight to cool off, went to dump it the next day, and the smell of the backends was heavenly. I took a little sip of it, and it was incredible, so I saved about a gallon of it and went to the store for a bag of frozen strawberries.
I muddled the strawberry and made a simple syrup from them (bottom of a mason jar, coated in sugar) , filled a quarter jar 200ml of spirit, filled with the saved backends to the 700ml line, topped it off with the strawberry simple syrup and threw in a few berries, let it sit overnight, and it was incredible.
My wife doesn't even like alcohol and I couldn't keep her off of it. It's one of those ones you call dangerous, because we couldn't stop drinking it.
In hindsight, I should've added some strawberry syrup to the thumper, something for more flavor in the spirit, but all in all, I'm stoked with what became of it.
This was for a 5 gal run, and I did invert the sugar.
I'm partial to this Bourbon
Recipe:
6.75# Blue Corn
6.75# Jimmy Red Corn
26.5# Yellow Dent Corn
6# Unmalted Rye
4.5# Munich Malt
4.5# Viena Malt
22.5gal water
DADY yeast - Ferment on Grain

So this started as blackberry wine and the liquor fairy distilled it into a brandy/liqueur/cordial? I absolutely love blackberry anything. I don't have a distilling tip, but I do have a question - what yeast did you use to ferment? I'm assuming ec-1118, but want to be sure.

Just made a pint of blackberry brandy still not ready for another 2 or 3 weeks left. I used frozen BlackBerrys and I think a half a cup of sugar. If it turns out will maybe make a qt only using a cup of sugar. Made a qt batch using I think one cup of sugar with vodka and made a qt. batch with brandy. I thought maybe the one with brandy would taste like blackberry brandy I only left it for almost a week. So I don't know witch one is going to taste like black berry brandy.

Love your videos, I started making hard cider following your instructions. I use what we don't drink to make BBQ sauce and in a chicken marinade I like to do!

Good stuff bud. I did a little testing in my 1 gal outfit making a vodka. After first run, I flavored it with blackberry concentrate I got from Olive Nation and let sit for a few days. I ran it again and there was a nice touch of the flavor in it. I used your discount at Olive Nation and saved a buck or two. ;p)

Noob question: What Proof should your brandy be when adding fruit to it? and does matter how long the fruit sits in the brandy?

Looks awesome, and dangerous. If I ever get into distilling I'll definitely make booze like that.
Closest thing so far that I made were a 16% ABV Berry wine (blackcurrant, redcurrant, raspberry, blueberry, huckleberry, blackberry) aged on oak for 6 months. And a Berry bomb mead with the same berry mix and cacao extract (fortified to 21%ABV)

Thanks bearded, I have tried making a Cointreau inspired liquor by hanging oranges above the neutral spirit. Put 500ml of high proof spirit in a LARGE container and then wrap 3 oranges in butchers twine, leave a long enough tail on the twine to hang the fruit just above the spirit, leave fora couple of weeks, depending on strength of flavour you want. The spirit will evaporate, then condense on the orange skin, oils are leached out and drop to the spirit below. Mix with sugar and water to dilute, it’s delicious. To be fair this was inspired by a recipe by TH-camr cuoredicioccolato

Mr bearded and bored I got a quick question for u sir. Jesse from still it made a whiskey using a cake from a box. My question is: can u mash in the cake as is, in it's powder form, or do u think it must be baked into a cake first in order to be mashed in? I hope that makes sense lol
That looks so good Brother. I was pretty much drooling all over myself watching you sip that stuff, ha ha. My cider is ready for racking and metabisulfate and sorbate treatment. Tart cherry of course for the first gallon, but I'm thinking pineapple of all things for another gallon. I'm guessing that it will play really well against the apple. The rest will be just plain apple. Have you ever used pineapple in a cider before ?? Anything you know that I don't that could be useful ?? Well I mean ...... LOL !! Be well and chat soon. -- den
