Ingredients:
3-4 medium size potatoes
2 eggs
1/2 tsp salt
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp dry oregano
65g (1/2 cup) all purpose flour
Any frying oil
Sauce:
1/2 shallot
1 tbsp capers
2 tbsp mayonnaise
1 tbsp ketchup
1 tsp Sriracha
Black pepper
mix well
Chives (optional)
Mm .. yummy !!

My mom used left over potatoes and fried with eggs on Saturday morning or left over mashed potatoes! She also used left over rice with eggs! Nothing was ever wasted! And we loved it!!

As you're learning to cook, please note sometimes on these videos things are done because they look better on screen, not because it is the best way to prepare a thing.
For example, at the start, it would be much easier to mix two eggs with the oregano, salt, etc in a separate bowl, mix it, before adding to the dried off potatoes. And mix the egg+spices mixture well with the potatoes, get every pieces coated, before adding the flour.

Can be with patotoes cut thin, onion rings, cauliflower and more.. very popular in northern India, Pakistan and into the Middle East.
The flour can also be of chickpeas and even leave out the eggs and add water. Very tasty!
