Mexican casserole recipe:
Ingredients:
• 1 pound lean ground beef
• 1 (15-oz) can Ranch Style beans
• 1 (10-12 oz) bag tortilla chips, crushed (I didn't use the whole bag)
• 1 (10-oz) can Rotel diced tomatoes & green chilies, undrained
• 1 small onion, chopped
• 2 cups shredded cheddar cheese, divided
• 1 (1-oz) package taco seasoning
• 1 (10.75-oz) can cream of chicken soup
• ½ cup water
• sour cream and salsa for serving
1. Preheat oven to 325°F. In a large skillet,
brown meat and drain off fat. Stir in
beans, tomatoes, onion, taco seasoning,
soup and water. Simmer over medium-
low heat until everything is well combined
and heated through.
2. Grease a 9×13 casserole dish. Put down a
layer of crushed tortilla chips, followed by
a layer of the meat/bean mixture, then
half of the cheddar cheese. Repeat
layers. Cover with foil and bake for 20-30
minutes, or until bubbly.
3. Remove foil and place under the broiler
just until the cheese starts to brown.
4. Let sit for 5-10 minutes before serving.
Top with sour cream and salsa.
I love key lime pie as well, but Brooke, I cannot wait until you are in your kitchen making cornbread and collards!

My family lives on Ranch Style beans! We use them to make easy quick red beans and rice. Ranch Style beans, Manwich Sloppy Joe meat, your favorite link sausage cut up then put over rice. Quick and easy!

@CogHillFarm, Brooke just made the Mexican Casserole and it was amazing. We did use the onions and will change it next time so he can take it for lunch. You mentioned soggy chips..so we got a few chips and just kind of put some casserole on it and ate it like a Nacho Supreme and it was good even with the baked in chips this time. Next time we are going to bake it with out chips and just use fresh chips and add sour cream and salsa so good. Thank You for Sharing.
Mama and Daddy are proud of their little girl. Chad at Adler Farms has two goats that stay out with the donkeys. My grandmother used to put food coloring in her chicken water to get colored eggs for Easter.

I understand about zones and such. We're a big continent. We have lots of different zones here in Australia. There are tropical regions where pineapples and bananas are grown. We're in a Mediterranean climate area so can grow citrus fruits, tomatoes, figs, stone fruits, apples, pears, and we have created the conditions for kiwi fruit vines and grapes too.

From I’ve been hearing that goats in general don’t like getting wet. All the homesteaders say their goats head for shelter when they even get a whiff of rain. We had goats for a short time for my brothers FFA project and since that was in Arizona and it rarely rains. But during the monsoons they would end up in the covered porch.

The Eureka is the best for lemons and limes! It handles the heat and the cold for me in northern CA. Same goes for my meyer lemons and black mission figs.

It brings me joy to listen to you talk. I hope that you never lose your Alabama accent and ways. However, when you come to a word you are unfamiliar with, and you give it a whole new pronunciation, it can be a little confusing at first. So you will know in the future, "bedroom suite" is pronounced "bedroom sweet" not "bedroom suit."
Mr Mandaue, it is suit in Al. That means a complete bedroom suit ( bed, dresser, chest.) A bedroom suite is a bedroom. Like a bridal suite. Just my take, but I was born and raised in Al. It's their podcast,don't make them feel bad because they don't speak like you. God bless.
