That's the controversy/debate about suadero, because it's not supposed to be with brisket cut. Brisket comes from the chest of the cow. Suadero it's a thin cut of meat between the belly and the leg. Very different flavor and texture. If you know, you know. Argentinos call it vacío.
Mikey , I think you have tried almost all types of tacos ..but there is one more type maybe you are missing out "Tacos de Guisado" / Stew Tacos"? Usually various different types at the same place , like Tacos de Champiñon con Queso, Rajas, Huitlacoche, cochinita, Lengua en salsa verde, and a few more , try them also! ..this is another different type of tacos very good too! enjoy!

Please come to Guadalajara, Jalisco in Mexico. We have amazing food options and theres this Burger place called Louie Burger. Many other reviewers and famous celebrities say its one of the best, if not the best they have tried.
For $12.50 USD, that burger better have been life changing! If and when I finally get on over to DF, I dunno about this burger joint but I am hell bent, bound and determined to get as many street tacos in as humanly possible. As cheap as they are it'd be a crime for me not to!

There are different levels of everything and tacos are that but it's all good and all levels are everything you want to have in the food world its the way it is

I was just thinking how funny it it that everybody that goes to Mexico focuses on tacos. There is a wide variety of food, like you said from North to South. Tacos for Mexicans are that food that you have when you are out and about, and want delicious food. He mentioned Anthony Bourdain, you should watch some of his episodes on Mexico. Simply lovely. Love tacos though!!! ❤
