The story mode has you fishing, collecting stuff, crafting with usopp and Franky, exploring. If you want to play it, it’s on the Wii or 3Ds.
You should play Pirate Warriors 2. Unlike the other Pirate Warriors, it has a "what if" story where Marineford never happened (so Ace and Whitebeard are still alive) but we still got the timeskip. The crew go to Punk Hazard but something completely different happens there, and we get a whole new scenario. Trust me, you will love that game. We get interactions and alliances that we'd never see in the main series.

4:16 There are several Weekly Shonen Jump crossover games and those are probably from that. Every five years or so there's a new crossover game and One Piece is in several of them. The two most recent ones are Jump Force (2019) and J-Stars Victory Vs (2014).
The one at 15:20 Great Pirate Colosseum was actually released alongside Dragonball Ultimate Butoden for the Nintendo 3DS. The fun part about this one is that the two games can link up and you can battle each other, you can only chose characters from the game you own but you can fight someone who plays the other game and thus you can have One Piece versus Dragonball battles.

Yes! You NEED to play Unlimited Adventure, Cruise 1 and Cruise 2 (the ones with Nightmare Luffy is from Cruise 1 and 2, I don't recall if he's in Unlimited Adventure). The games didn't come out in the US, so you likely need to import them from somewhere, but those games are my favorites on the Wii and I highly recommend them. What you watched from those games is the battle mode (or whatever it was called), which has a ton of characters, including White Beard and Moria, and as you saw, Nightmare Luffy. The main game is somewhat of an RPG where you go adventuring on islands and gather materials to upgrade your stuff. You can fish, collect bugs, etc and it all helps you get stronger. I explain it really poorly, but these are my FAVORITE One Piece games ever made, and NOTHING has come close to beating them in my eyes. Unlimited World Red was kinda like it, but it was more mission based, and you could only use 3 straw hats at a time, which really took away from that great experience that was Adventure, Cruise 1 and Cruise 2.

There was a similar game made for the US under 4kids called Grand Adventure iirc but it has the 4kids dub actors. The Grand Battle games came out around Water 7 but Foxy is the latest character you can play as. It does have Shanks and Mihawk though too. Also it wasn't in this video despite there being other crossovers but Jump Super Stars and Jump Ultimate Stars are great games and have several One Piece characters, both playable and support. It's a crossover fighting game that has a ton of characters from Shonen Jump in it.
i 100% the pirate warriors 4 game in 24 hours >.< was such an incredible game and i loved it, i also 100% filled the maps on all the characters. 3 was harder in the long run, but that was because of the game modes being more merciless then in 4.
Speaking of One Piece Evolution. My favorite gacha game did a collab with One Piece recently and Luffy was soooo good. Luffy even has the alternate Pirate King costume and can even use Gear Fourth and Conquer Haki too, so yay~, lol XD One Piece did collab with only 3 gacha games to help promote Film Red movie, and I think this was the first time they decided to promote using gacha game so that's nice, and my favorite gacha game was one of them. Lol XD I prefer to whichever game I enjoy more rather than the game based on the anime I like, which is why I play that but not Treasure Cruise (Played Treasure Cruise first though long time ago). But I still like One Piece though so I was shocked to see the collab, lol XD
