    Modified from Nagi ( Recipe Tin Eats)2 tbsp oil1 small red onion , peeled, halved and sliced1 garlic clove, finley chopped2 small red/ yellow capsicum (bell pepper) cut up4 tomatos, diced400 g / 14 oz can crushed tomatoes1 tbsp each tomato paste, BBQ sauce & tomato sauce1/2 cup / 125 ml chicken or vegetable broth (or water)1 tsp EACH smoked paprika and cumin1/4 tsp EACH black pepper and curry powder (or other hot spice, adjust to taste)1/2 tsp salt6 or more eggs 2 tbsp fresh parsley or coriander / cilantro , roughly chopped
    Pita or crusty bread, to serve
    Instructions
    * Heat oil in a large size skillet over medium high heat. Add garlic and onion, cook for 2 minutes until onion is translucent.
    * Add capsicum, cook for 5 minutes.
    * Add paprika, cumin, curry powder, salt and pepper, cook for a couple of minutes, then add canned tomatoes, tomato paste, sauces + broth. Add diced tomato. Mix to combine well.
    * Lower heat to medium low and simmer for 15 minutes until thickened enough to make indentations (don't want dry sludge, needs to still be saucy).
    * Make indentations in the mixture and carefully crack the eggs in. Leave to cook for 1 minute until edges of whites are set, cover with lid and steam on stove for 3 minutes (runny yolks), or just simmer them without a lid.
    * Remove from heat and serve immediately, scattered with the coriander or parsley. Serve with crusty bread, or pita bread.

    Nice looking meal rose looks very healthy, can't believe all those cheeky rat's though.
