How to Season A Donabe

  • Recently bought a Donabe Pot and need to know how to season it? Here at Mrs Lin's Kitchen we will show you the simplest way to season your donabe that you have just purchased from us and how to care for it!
    To season a Donabe Pot, all you need to do is make a thick unseasoned rice porridge by following the steps in our video.
    After use, only wash with warm water and allow the donabe to dry completely before storing it. Always allow it to air dry upside down so mildew does not grow on the bottom of yoru donabe pot.

    Thank you so much for the instructions! They matched almost 100% to the written instructions I received with my donabe except you had MORE detail and to see exactly how to you treat yours helped so much (such as pouring some of that porridge on the rim, edge where the 70% water fill isn’t reaching!     Very useful video. Thank you. One comment : I use a wooden spoon instead of a metal one to mix ingredients in my donabe. That way I avoid the risk of scratching it.

      MrsLinsKitchen Thank you for your reply. I bought a Donabe pot from Nitori, in Okinawa. This pot has two inner flat-plate-like lids with many holes. One is made of metal and the other is made of clay. It is not a rice cooker. I bought a Donabe rice cooker and it looks different. It has two actual lids. I bought other Donabe pots recently, and those do not have those flat-plate-like-lids. Because I didn't know what to do with those flat-plate-like-lids, I just kept them in the box. ありがとうございました

      @@MonicalovesTAEMIN i think those flat inner lids are for using it on Induction range. those heat up inside the donabe from IH, instead of by flame. If you are cooking on gas range, then don't need the lids.

      Mood Thank you for watching. Make sure you have liquid in the pot the entire time. Bottom gets burned when not enough liquid is in the pot. When the bottom gets burned, make sure you soak the pot in liquid before removing the burnt food. It depends the severity of the burnt mark, some maybe more permanent than the other.

    Hello! Thank you for sharing your instructions. I recently received a stone/clay pot similar to a donabe. Looks like it have some kind of paint or coating on the inside and outside of the pot. Do I need to soak this over night before seasoning with cooking rice/porridge method?

      The inside of your Korean pot has been coated with the glaze just like the exterior. There should be instruction included with your Korean pot. Isn't it? Since your pot is also porous like the Japanese donabe in my demonstration, I think you can follow the same instruction to season it.

    I have found several pieces at the Thrift Stores here in Hilo; yes, and the Donabe I bought at the Salvation Army Sally’s Store was still in the box, brand new, never been used 🤩 WOW🙏🏽♥️🙏🏽♥️🙏🏽♥️
    I found another one at the Hilo Refuse Transfer Station where there is a Community Thrift Store that sells donated things that were donated by people getting rid of things. Its amazing what a beautiful piece Donabe but the lid was missing, I have the huge piece but no lid. Would you tell me if these beautiful pieces that I love using everyday; can they be cooked over the fireplace stove top?

      Yes, you can but you need to have water in the pot while using it.

    I was wondering if soap is a good idea when using a porous material. We never wash the pizza stone with soap. If the inside is not glazed you will never be able to take out the soap perfume.

      Perhaps lightly use the Castile soap from Dr Bronners.

    Hi! Can I put my donabe clay pot in the oven while cooking rice chicken?

      SugarAffairs While we have not personally tried using a donabe pot in the oven, we know that some people do indeed use donabe pots in their oven however only if it is made in Japan and is of high quality. We would not recommend using a low quality or made in China donabe pot in the oven as it may not be able to withstand the temperatures. You will also want to make sure to be very careful with heating the donabe pot and ensuring that you do not heat it up unless there is liquid inside the pot. We would recommend testing with lower temperatures in your oven first however you will definitely need to make sure that that it is indeed a high quality donabe pot.

      Thank you for watching my video. When you choose donabe, you want to find the right size for your purpose. If you are cooking for a family of more than 2 then find one that's larger than 9 inches in diameter. If it's just for yourself, 7 or 8 inches are big enough. Pattern and design of the donabe are all personal choice. Japanese made donabe is definitely the way to go. I do not recommend Chinese made donabe because they tend to be poorer quality. Hope that helps.

    I did this, but afterwards, I remembered I added a few drops of sesame oil to my rice when I first cooked it. Should I redo this process? Also, how often should this process be done?

    This may be a dumb question but what kind of rice should be used to season a donabe? I have minute rice and jasmine rice. Should I get some plain long grained rice?

      patricia greer Hi Patricia, The reason for seasoning the donabe is to coat the crevices and holes of the clay surface of donabe and the starches from rice will do just that. Long grain or short grain rice will do that. Hope this helps.

      Hi, I’ve done that and it worked fine for me. My pot’s capacity is 3 liters, I used 1.5 cups of rice powder and once it came to boil, I added 2 tablespoons of coconut oil. (In India we temper clay pots with rice starch + coconut oil kept overnight in the pot, washed after 10-12 hours).
      I use it mostly for stewing veggies and when I clean, I use baking soda or lemon (scrubbing with the lemon peel) or coffee grounds. I am a new user but so far, it’s clean and no issues. I just make sure that I repeat the rice process every 4-5 months (crazy new user), never use steel wool or super high heat. Also wooden spatula. If you have a hyperactive husband, keep him away. Mine broke my first pot I got in Vietnam. My second pot was bought in Singapore. Good luck.

      Sorry I never use donabe pot for making yogurt so not sure how long it will retain heat. If you don't continue heating the donabe, the heat will dispate with an hour. Please try it to find out. Make sure there's liquid in it. Thanks for watching this video.

    I bought an old, used clay pot and now see a small crack after soaking it for 18 hrs. How can I fix this crack in order to cook with it? Thank you.

      I am sorry that I would not recommend using it because of the crack may crack open once it's heat up and it would not be safe if you are next to it.

    I was seasoning my donabe and the rice burned on the bottom. How can I remove the burned rice?

      Elsie Gonzalez Please soak your donabe with water and let it softened the burnt rice. When the rice is softened, simply brush it off.

      yes, a glass plate stove - I tried it but with low heat and it didn't crack.

      +Vanessa Vanier Thanks Vanessa for answering the question. Yes, gas stove top would be the number one choice for donabe cooking. However, electric coil or glass plate stove can do the job as well but not the best result.

      @@MrsLinsKitchen what about using a metal diffusion plate on a glass electric stove? Isn't there the worry about carbon monoxide using a butane gas stove indoors? I just got a "iga-mono" kamadosan clay rice cooker 1000ml (33oz). It has a flatter inner lid with 2 holes and the top outer lid is domed with one hole that I read should not be in line with the inner lids 2 holes. The only unglazed part of it is the bottom of the base.

I dunno what is mine hahhahaa... I bought one 3 years ago because it’s so pretty but I didn’t use it and I threw away the instruction booklet.::( Do I need to apply the same season method no matter what type of Donabe?

      Not recommended because curry has strong flavor and the color may stain the donabe which is quite porous.

      Seema Gupta Almost all the nabe pots do not have glaze on the inside. The interior is the natural ceramic color. Those colorful glazes are on the outside only.

    why do some donabe have 2 lids and some only have one lid ?

      The double lids are normally more expensive than the single lid. It's fancier and help keep the heat and moisture in the pot more. I think the result is pretty much the same.

      The inner part of the donabe isn't glazed so needs to be seasoned.
