I will soon need to make another batch, this time with the Coconut water which isn't stated in my copy of the book, this makes a lot of sense as a swap, maybe adding some toasted oak chips too, thanks for the tip re updated recipe.
Toasted cane sugar and toasted coconut sugar as a mixed sweetener with dried bananas and maybe a small piece of dried pineapple would maybe recreate a rum Agricole. Or maybe add some vegetables for the literal vegetal note lol

My problem is that i can't find a good way to clarify it, i tried the milk one and it worked but I didn't get a good result. Can you suggest for me a good method to clarify non alcoholic spirits. Hey @KevinKos, you have recommended a number of times now to freeze your zero-proof concoctions as a way of extending their utility. Have you ever had issues freezing your zero-proofs in glass? I would have assumed that the expansion of the ice would cause the glass to shatter? Or do you put your liquids in plastic before freezing?

Curious as to why you bashed a chunk of nutmeg in the mortar and pestle, rather then grate the amount you need with a microplane. If the goal is to increase surface area, wouldn’t the microplane produce superior results for less work?

I usually use a bit of molasses to my virgin rum. Toasted oak chips for aged.

2:38 he states not to fill the bottle all the way up. Reckon that's the way to prevent any problems from expansion in the freezer

He already needed to the mortar and pestle, so why dirty two things
Exaclty. When there is a bit more nutmed needed I preffer to crush it like this.
Love how easy this is! Do you think that adding vinegar (making somewhat of a shrub) would better mimic that kick from a real rum?
You can use vinegar for kick too, but you'll of course get some extra acidity with this.

If you lover down PH you could use Sodium Benzoate but I preffer freezing.
Non alcoholic Holmes Cay Grand arome:
.6 grams of rubber glove
3 grans of olives
1.1 grams of old tire
Can sugar
Gasoline

If you add a bit of ginger you might be able to capture some of that alcohol burn feel of rum.
