    Dehydrating lemons is a great way to preserve your lemon or citrus harvests. Super easy to do and will last ages! I have also added a BONUS recipe for using up the citrus scraps to make a DIY non-toxic citrus cleaner. You can dehydrate lemons in the oven or in a dehydrator.
    It’s winter and I love a hot water lemon drink in the morning to warm up! The only thing is that often I put the remaining half a lemon in the fridge and it will end up at the back of the fridge until it gets thrown out 🙁 So if I want lemon for my tea I pick a small one and put it somewhere front and centre so I can see it! This is why I love using dehydrated lemons because you can use a couple of slices as needed. Dehydrated lemons can also be used in baking, cake decorating, or finely chopped to add some lemony flavour to your cooking. They rehydrate once they get wet so they work quite similarly to fresh lemon but have a more caramelised flavour.
    Dehydrated lemon in cocktails or any drink is amazing. It looks beautiful nd adds a delicious lemon flavour.

    I know this was posted a year ago but I just found it and made some and they are now a staple in my cupboard! I use them mostly in cocktails, mocktails, and to brighten up a sub par red wine :) I have also used them in stews, soups, and marinades if I don't have fresh ones on hand.

    Kia ora Holly! In New Zealand the humidity is quite high as you know. Do they stay nice and dry in the jar or do you recommend throwing in one of those sachets to keep it dry? Thank you!

      The rind will be bitter so depends how thick you cut them. Mine are pretty thin and more like sour chews

    Hey Holly, does the dehydrator cost much to run I know you have to leave them on for hours I'm thinking of buying one,cheersxx

      I have no idea how to calculate that as I just use mine sporadically. Usually 8 hours. They may have those details on the website but I think it’s quite small. I’m testing out solar drying soon!

      Just dehydrate until they are dry and put them in an airtight container 🍋

    Soak your slices of lemon in sugar or honey or salt before you dry them or sun dry them. The sugar and salt will allow the lemon to be stored for longer.

    You can whisk them and turn them into a powder and store the powder in jars
