    I never thought of using the konjac blocks!! Amazing!! Will try it!!
    MY hot tip for nigiri topping: Papaya (especially if you cut one open that didn't ripe correctly and isn't as tasty to eat as is), scoop into half centimeter thick at the top and about and inch to inch and a half wide (a table spoon will do this automatically) strips. VERY delicate. lightly press in a tea towel or paper towel and let sit while you make the marinade. Marinade: (all to taste) Kelp powder, liquid smoke or smoked paprika (a little goes a long way), coconut aminos (or a little bit of sweetener and salty product that you happen to have around including nutritional yeast), a bit of water and a bit of fat (optional). Then gently place papaya into marinade for 30mins to overnight. When you and your rice are ready, prepare balls of rice and gently lay and press each piece of papaya on top. It should stick reasonably well, but if you are having trouble feel free to add a dab of wasabi underneath the papaya or wrap a thin ribbon of nori around to hold it in place.
    Any small or broken bits you can mix with a vegan mayo or plain yogurt and siracha and make a spicy battleship version (like the corn one in the video)! Top with green onion or chives if you have them handy!
    My staunch meat enjoying partner said he wouldn't have known it wasn't fish. It melts in your mouth the way a super fresh butterfish does. You can play around with the marinade, but the kelp really helps it have that fishy taste... which if you aren't a fish lover you can omit completely and just enjoy the sweet and savoury taste and melt in your mouth texture. … aw man... my mouth is watering.

    I feel so cultured when I watch your videos lol! So informative and full of stunning delicious food, of course ;) And vegan sushi is honestly the best because it's 1. cruelty free and 2. don't gotta worry about food poisoning and stuff, haha
