This is the best version of banana fritters I've ever seen, and I'm sure they'll also taste the best! The South Indian state of Kerala, has a similar recipe, called "Pazham pori". But most of the time I've tasted, it's soggy, oily and look limp. You have taken it to an exotic level by using cinnamon, corn flour, moist grated coconut and the drizzle of maple syrup and spinning lime. They look super crispy and light. It's incredibly inviting and tempting! Have a great weekend chef!

You can certainly reuse it a few times. I always let mine cool down, then strained using a coffee filter placed in a funnel back into the original container.

Ultra processed seed oils are certainly not healthy, but once in a while it won't be a problem. So many people fry food in seed oil each day, that's concerning.
