What meat is used for the bolognese? Beef? Pork? Lamb?
It should be beef (they don't specify anything else, so probably beef).
Have your tried Tam Jai Yunnan Noodle（譚仔雲南米線）? Not Tam Jai Sam Gor （譚仔三哥）though, don't mix them up. Go and order something with the Hunan sour and spicy soup. You will love it.
