  • Learn how to make Macaroon biscuits from scratch. This old school recipe from 1947, is the world’s best Macaroon biscuit and melts mouth, delicious and this recipe is so easy ! ¬

    Makes about 12 Macaroon biscuits
    How to make Macaroon biscuits
    Making the macaroon Paste Recipe Ingredients:
    Granulated sugar 451g
    Ground almonds 225g
    Ground rice 28g
    Egg whites 155g
    First put all the dry Ingredients into a clean grease free mixing bowl, mix round with beater 1st speed for 1 min adding in the egg whites now scrape down, Now start mixing on 2nd speed for 1 mins, Now mix for 4 min on 3rd speed, Now ready you can put the macaroon paste into a bowl and cover it. you can use right away if you want to. Now if you store it you will need to return the paste to the mixer and mix for 1 min on 3 speed now it's ready
    Now you need 2 or 3 trays with rice paper or sugar paper on them
    Now you need a piping bag with a 15 - 18 mm tube, and now you can pipe them out to around 5cm round & 2cm high, leaving room for the biscuit expand in oven
    Now just dust the tops with castor sugar and add a almond nut in the middle
    Now you are ready to bake in the oven at preheated oven at 160°C/325°F/gas 3.
    Bake the macaroons in the preheated oven for 20 to 25 minutes, until golden.
    Leave to cool on the trays, then carefully remove and store in an airtight container.
    Now you can rest with a cup of tea

    Just made these, they came out great Bit worrying how much sugar is in them! I added some almond extract for extra taste.

      Hi I use this recipe all the time in the Bakery, and I always add almond extract because when I sell them in my shop people have always had them with flavouring in, so if I left natural people will say there not the same 😀😀 have a happy Christmas & new year 😀😀 laters Steve

    Took me a while to work out how many egg whites in 155g ???

      Hi Mate in the bakery we have egg whites in KG boxes and the recipe is 155g, g is the shortened abbreviate of grams hope this help you Laters Steve

    confused again,,,,you say oven at 180-190C but in the description it says 160C

      Hi no problem, yes after I made the video I baked some at home and found my oven at home 160c was a good temperature in my fan oven, now it really down to your own oven, so what I think is best 160c - 190c, funny thing is at the Bakery it's different again as I bake on stone and no fan, hope this helps laters Steve

    are these macaroons chewy or hard?

      Well that's a good question 😀 it's all down to the baking, when I make them to sell in my shop soft inside, and a firm outside, and that is how the customers like them, but if you want them dryer leaving in the oven on a lower heat will make them harder 😀 hopefully this has helped to you 😀 Laters Steve 😀
