Energy boost truffles, no added sugar

    1/2 cup Almonds
    1/2 cup walnuts
    1/2 cup cashews
    Roast these nuts along with 1/2 tsp ghee
    Dry roast 1 tbsp sesame seeds
    Roast 1 tsp fennel seeds and crush them
    Chopped roasted nuts when are cooled
    Take 9 to 10 figs and boil them until tender then make them into paste
    Take 500 grams crushed dates ( i used store bought) if you are using fresh soft dates ,crush them as well and make a paste
    In a pot add 1/2 tbsp ghee then put date and fig paste mix it well and add 1/2 tsp green cardamom powder . Roasted and crushed nuts, crushed fennel and roasted sesame seeds. Cook on low for 5 to 7 minutes and let it cool.
    Grease hands with ghee or olive oil and make bite sized ball. For the coating i toast unsweetened desiccated coconut and add pinch of cardamom powder for flavour. Second topping i use toasted sesame seeds and the third one is ground pistachios. You can coat these truffles in melted dark chocolate as well. Roll them into your favourite coating and keep them refrigerated in airtight container. This recipe is perfect for Ramadan or enjoy with coffee or tea.
