Sweet Apricot chutney: Soak 16 pieces of apricots overnight in water. Add 1 piece of jaggery around 1/2 cup, cover and cook on low flame until apricots are tender. Blend the mixture into greased. Dry roast 1/2 tbsp of cumin seeds and crush them coarse and add into blended mixture along with 1 to 1.5 tsp of salt and 1/2 tsp of red chilli flakes. You can adjust salt , pepper and sweetness according to your taste. I didn’t add sugar in it as jaggery makes it really sweet. Add 1/2 cups yogurt of water and cook 10 minutes then add 1 tsp of white vinegar. Remove from heat and once it’s cool down the chutney will get more thick. Store in a clean container and keep refrigerated. Make sure never put wet spoon in container . You can enjoy this chutney with samosas,pani puri,spring roll ,specially chaat and much more. It’s good in refrigerator up to a month.
Room temperature butter 200 grams Sugar 1 cup Pinch of yellow food colouring 6 eggs 2 tsp vanilla essence 1/2 cup of milk 2 cups all purpose flour 2 tsp baking powder Whip butter for few seconds then add sugar+ food colouring and whip until smooth and creamy. Add 6 eggs one at each time and mix for few seconds. Put vanilla essence and milk ,slightly mix and add flour+ baking powder. Mix everything well and pour the mixture into greased and lined baking sheet with parchment paper which is 9x12 size. Pop in the oven for 25 mins at 350F. When the cake is cooled down remove the edges and cut slices. Place all slices on a baking tray lined with parchment paper and bake for 20 minutes at 325F then remove and flip cake rusks and put back in the oven for 15 mins at 325F. Let them cool down and store in airtight container. Enjoy with coffee or tea.

Marble tea cake: Crack 3 eggs in a bowl. Take 1/2 cup plus 1 tbsp sugar and grind it into powder then add into eggs. Oil 3/4 cup Milk 1/2 cup Vanilla essence 1 tsp Yellow food colouring ( pinch of) Mix everything with a whisk. Sift 1 cup plus 1/4 cup all purpose flour and 1.5 tsp baking powder into the mixture Mix with spatula and separate 1/2 cup batter. Into half cup batter add 1 tbsp cacao powder and a tbsp of warm milk. You can add 1 tsp of instant coffee as well. Take a greased loaf pan lined with baking paper. Put some cake batter then put chocolate and mix with wooden skewer. Repeat this step another 2 times, means each batter will have 3 layers. Take a spatula and dip in oil then mark a line in the centre and bake at 350F for around 40 to 45 mins or until the toothpick comes out clean. Cover and let the cake cool down then cut into slices .Enjoy with tea or coffee.

Yummy fattoush salad Romaine or green leaf lettuce 4 cups cubed Red onion chopped 1/2 cup Bell peppers 1/2 cup Radishes 1/4 cup chopped Cucumbers 1.5 cups Tomatoes chopped 2 medium Red or green cabbage 1 cup salad dressing: Lemon juice 2 tbsp or as needed Salt to taste Pepper to taste Sumac powder 1/2 tbsp Pomegranate molasses 1/2 tbsp Olive oil 1/2 tbsp To make crispy tortilla: Take 2 whole wheat or white large tortillas and cut them into cubes. Put them in a baking tray drizzle some olive oil, salt, pepper and some sumac. Mix well and bake at 400f for 5 mins or until they are golden brown. Make sure to turn the sides after 2 to 3 mins so they get toast evenly. Don’t mix dressing into salad ahead of time . Mix and garnish before serving. You can garnish with some pomegranate molasses or fresh pomegranate seeds. Enjoy!

Yummy meetha pura, semolina pancakes Take 1 cup of semolina (suji) Add 1 cup warm milk in semolina and let it set for 10 to 15 minutes Add 1/2 cup of sugar 1 egg 1/4 tsp green cardamom (elaichi)powder Dry roast 1 tsp fennel seeds(sonf) and crush them into coarse and add into the mixture 1 tsp of baking powder Blend everything for few seconds and shallow fry puras in desi ghee on medium heat around 2 minutes each side Enjoy!

Juicy and delicious malai boti recipe: Chicken boneless thighs 1 kg cut in 2 inch pieces . Marinade chicken with, Yogurt 5 tbsp Mayonnaise 2 tbsp Cream 5 to 6 tbsp Ginger paste 1 tbsp Garlic paste 1 tbsp Green chilli paste 1 tbsp or to taste Salt 1 tsp or to taste Chaat masala 1 tsp Green cardamom powder 1/4 tsp White pepper powder 1/2 tbsp Black pepper powder 1 tsp or to taste Roasted cumin powder 1/2 tbsp Coriander powder 1 tsp Cornstarch 1 tsp Lemon juice 3 to 4 tbsp Chopped cilantro 2 tbsp Mix everything with chicken and let it marinate for about an hour at least or more. Put the chicken on the wooden skewers tightly. Add oil into a pan and place chicken skewers on medium heat . When one side gets bit golden brown then flip and cook other side about 7 to 8 mins altogether and keep checking both sides . Then lower the flame for about 2 mins and cook. After done keep them covered and you can also give charcoal smoke to get pure barbecue flavour . Eat it like this or make paratha roll with tamarind sauce and salad.

1/2 cup Almonds 1/2 cup walnuts 1/2 cup cashews Roast these nuts along with 1/2 tsp ghee Dry roast 1 tbsp sesame seeds Roast 1 tsp fennel seeds and crush them Chopped roasted nuts when are cooled Take 9 to 10 figs and boil them until tender then make them into paste Take 500 grams crushed dates ( i used store bought) if you are using fresh soft dates ,crush them as well and make a paste In a pot add 1/2 tbsp ghee then put date and fig paste mix it well and add 1/2 tsp green cardamom powder . Roasted and crushed nuts, crushed fennel and roasted sesame seeds. Cook on low for 5 to 7 minutes and let it cool. Grease hands with ghee or olive oil and make bite sized ball. For the coating i toast unsweetened desiccated coconut and add pinch of cardamom powder for flavour. Second topping i use toasted sesame seeds and the third one is ground pistachios. You can coat these truffles in melted dark chocolate as well. Roll them into your favourite coating and keep them refrigerated in airtight container. This recipe is perfect for Ramadan or enjoy with coffee or tea.

I am sure that the machine makes it easier, but you ou can do it without the machine as our mothers and grandmothers did it for centuries. Warm the milk up to 38°C. Mix it with genuine yogurt with true lactobacillus bulgaricus.(You can also buy dried bacterial cultures.) However, better use genuine and plain Turkish, Greek or Bulgarian yogurt. Close the container and cover it in a blanket or thick woolen clothes to maintain the temperature. It's going to take 3-4 hours. Keep it in a warm room or if possible near the fireplace or the oven. When done refrigerate and enjoy.

What is the temperature you put?
This device doesn’t show temperature, you have to put timer which shows hours. I set timer to 5 hours. I always get perfect yogurt in 5 hours. This device is a blessing.
