- The famous Homegrown Kosher Garlic Scape Pesto!
Ingredients:
•1 cup chopped (into 1" pieces) garlic scapes
•1 cup packed fresh parsley (tough stems removed)- I used two 1-oz plastic containers
•2/3 cup pine nuts
•3 Tbsp freshly squeezed lemon juice
•1 tsp kosher salt
•A few turns of the pepper grinder (to taste)
•1/2 cup olive oil
Instructions:
In a food processor or blender, blend all the ingredients besides the olive oil until finely pureed, scraping down the sides a few times. With the food processor running drizzle in the olive oil. Continue blending for 1 minute after the olive oil had been added. Refrigerate for up to a week or freeze.
