    Just finished making this following your recipe. I substituted the broth for Fire Cidar I finished fermenting, and a splash of Fish Sauce. The final product is better than I could have comprehended initially, thank you for this easy to follow guide.

    How long is the kimchi good in the fridge after making it?

      Kimchi can be stored in the refrigerator for a long time because it is fermented food. If you store kimchi for a long time, it will be fermented and become sour. For the best taste, I recommend eating it within couple of month. If you made a small amount, it seems like you could finish it within a month or two. Thank you for the good question.😊

    Did you use a radish in this recipe? I did not see it in the recipe.

      When making kimchi, I didn't julienne the radish but instead blended it with other ingredients to make the kimchi seasoning. Please refer to the video for more details. Thank you!😊

    Table salt does not wotk for brining so dont use it.
