    Thanks for the tip about using dates as a replacement for sugar. I have to take a SP Casserole to a dinner tomorrow so I’ll use this recipe. Avoid sugar where we can right?

    I work at a big box store and, naturally, at this time of the year there are what seems to be wall-to-wall pumpkins. People carry them out by the buggy loads. Sometimes I ask what they are going to do with them. They always say either carve or paint them. I ask if they have ever cooked one. That thought never occurred to them. So far I have purchased 6-8 and have cooked and frozen the pulp - which, by the way, is delicious. When you slipped and said “sweet potato pie” instead of casserole, I immediately when to pumpkin casserole. Definitely going to try this out. Do you think the recipe would need to be tweaked any?

      It might need a couple more dates because the pulp isn’t sweet like sweet potato

    ❤😊I have a question but it has nothing to do with this recipe. I was watching your recipe for Upside Down Pineapple Cake and wanted to know were you got the pineapple juice, if your not using canned pineapple. I eat fresh pineapple almost everyday with my oatmeal and I’ve never seen that much pineapple juice from a fresh pineapple .
