Four different varieties of dosa filling with four chutney
Beef kheema and mozzarella cheese dosa
100 g minced beef
1/2 cup chopped onion
1/2 tsp crushed ginger, green chillies, garlic
Mozzarella cheese
1/4 tsp pepper powder
1/2 tsp masala powder
1/4 tsp turmeric powder
Salt
Method
Saute onions, ginger, garlic, green chillies, then add masala’s, and then minced beef , saute until the beef mixture turns brown or cook. Beef filling is ready
Prawn filling
100 g prawns
Boil the prawns and crush them in a grinder
Saute onions, then add ginger, garlic, green chillies, then
1/4 tsp garam masala
1/2 tsp chilli powder
1/4 tsp pepper powder
Salt
Then add crushed prawns , saute until its rawness goes , it tastes better with more prawns
Masala dosa
Pressure cook 2 potatoes and 2 carrots, then remove the skin and mash this ( do not mash too much, there should be small pieces)
In a pan add oil , splutter mustard, then add 1 cup sliced onion, saute the onions and then add 5 slitted green chilies, 1/2 tsp ginger minced, 2 tbs garlic crushed,
Salt ,Then add 1/2 tsp turmeric powder , then the potato mixture, saute until the rawness goes , then add cooked green pieces, if u prefer watery gravy you can add 1/2 cup water and boil for 5 minutes or until u get right consistency
Paneer dosa ( for 1 dosa filling)
For fresh paneer boil 1/2 litres milk , to the boiling milk add juice of 1 lime , then cover with lid and let it sit for 5 minutes without flame, then strain the milk , u can use this paneer for the filling
1/4 cup chopped onion
1/4 tsp ginger
1/4 tsp garlic
1/4 tsp green chilli
1/4 tsp pepper powder
1/4 tsp garam masala powder
Saute the masala and add paneer , do not over fry the masala.
4 different chutney
Green chilly chutney
1 cup grated coconut ( fresh coconut)
Small pieces ginger
4 to 5 shallots
4 garlic cloves
Salt
4 to 5 green chilies
2 tsp water
Grind this in a mixer grinder
No need to temper this chutney, this is good without tempering
For red chutney
Dry roast
5 red whole chilli
Small pieces ginger
3 garlic cloves
Curry leaves
5 shallots
Grind this in a mixer jar along with 1 cup coconut, 3 tbs channa dal
Then temper with mustard and curry leaves
Green chilli chutney
Smash green chillies, onions , tamarind, salt and add raw coconut oil
Onion chutney
To the minced onions add spicy chilli powder, salt , tamarind and raw coconut oil, mix really well
