@@masterofallgoons Not all seltzers are created equal. You might try Richards Rainwater or Topo Chico if you don't like the bitter taste of normal carbonated waters. RW is mild with a gentler fizz. :) Topo has a nicer flavor from the minerals and a VERY strong fizz (I literally have to let it breathe. lol)
@@Bones97000 - I've generally tried all the ones people tell me don't have that aftertaste, including topo Chico, but never heard of the other one. Maybe I'll try it, but that bitterness is always present to me in any carbonated water.
@@masterofallgoonsI can't comment on the differences between them although from what I can tell I do feel like there's a more bracing and noticeable taste when I get served sparkling water with espresso, although I don't often have just plain sparkling water to drink at home or at restaurants so it's hard to compare. The only thing I would say as a "tip" but not really something you need to bother with is that maybe you can just get used to the taste? I'd assume if you're drinking espresso it's not that you can't handle a little bitterness, but it could be a bit of an acquired taste? Personally I'd probably do the first sip of sparkling water at least to try to get myself used to it, and then optionally just don't drink any more in between sips OR after since you'll be left tasting the sparkling water. Not sure if that's worth it though or if you'd actually start enjoying it
In italy we serve espresso with water too, but according to our tradition we drink all the water before sipping our espresso. We use water as palate cleanser and we keep the taste of coffee after that, but ofc that’s completely subjective, everyone does it differently, be free to drink it as you prefer:)

If I'm ordering straight espresso I like to put what Starbuck's calls "1/2 inch of cream" in it. Nicely offsets the bitterness, without covering the more pleasant flavors.
I've found the difference between a "good" and "great shot is a combination of all the little things - I could grind the beans, tamp the grounds in my basket, and pull the shot. But if I spritz the beans with a bit of water before I grind, use a WDT and leveler before tamping, put on a screen, pre-infuse for a moment, pull the shot, and stir, the result is overall better. I could skip any one of those steps and likely not notice, but it all adds up.

Try to put your espresso on a vibrating plate so you can see waves on the surface. This somehow changes the emulsion in a way that the espresso tastes less acidic and more balanced. Didn’t believe this works until I tried it 😅

Actually, Keeper was the first and only place it's been served to me that way, but it was great. I always stir when I'm espresso-ing at home.
I like sterd espresso with a twist if Lemmon peal. But the side car of sparkling water sounds great. What would you think of a side car of prosecco?

What about removing the crema to get rid of the bitterness? I personally prefer just scooping it off

I was scolded in Italy for drinking the water after the coffee. They told me I'm supposed to drink the he water first.
There's even a trend where people spoon of the crema entirely. Not for me, since i enjoy the texture.
