Really cool. Thanks for the information. I'm from Brazil and I buyed some fried vegetable chips in a maket and they where diferent than normal chips. After thinking how they could've made those, I tryed seraching for a vacuum fryer and there it was.

The vacuum part means sucking all moisture from the ingredient. You could probably do it but you will chicken floss instead of fried chicken

Are they any difference between normal frying and low pressure/ vacuum frying? in terms of nutritional value, frying time, texture or taste maybe?

Higher retention of Nutritional Quality ( phytochemicals ) , Colour is Enhanced (less oxidation) , oil degradatikn reduced compared to at atmospheric.
