Just a thought, ff you had a door that hinged off the wall that the TV is on, when it's open and you're on the throne it will obscure you from anyone who might be in the van with you at the same time and it hides the toilet from guests when it's not in use.
It’s funny you said looks like a Mel Brooks movie because I instantly thought of Blazing Saddles looking at this place and thought of the Great Outdoors just watched that last weekend. Love those movies Mel Brooks one of my most favorite human’s ever. That look like a fun place.

The shop rag face cloth was epic 🤣 Why not just leave the toilet how it is and sit on it sideways? Whoever buys the rig could either do that or install a door as originally planned. I have a marine toilet in my Sportsmobile. My butt cheeks are the only cheeks that have touched it and I think it's heaven LOL! *edit*: love the Ron White reference.

There is an episode of King of the Hill that pays homage to big Texas Steak Ranch also. In the episode Hank is trying to get an account for Stickland Propane from a client in town from Boston and he makes Hank do all kinds of silly crap and he ends up ordering the big steak and takes 1 bite and then says he's stuffed, lol. It's a pretty funny episode but then again It's my favorite animated TV show ever so I'm biased.
Still ain't missing much in Amarillo. BTSR does buffets that are good. I drive by that place daily. the beer garden has more or less been replaced by the Starlight Ranch down the road.
I've been to a place like this in Branson and here's what reminded me of it. At 25:10 the guy playing the guitar at the table is a no go for me. I'm fine with live music and other forms of entertainment in restaurants but don't get close to me and try to get my attention when I'm trying to eat. Other than that cool place.
You make a good point, however, this is an emergency vehicle after all & getting to the person or persons in peril as quickly as possible means the difference between life & death, so I’m inclined to think that a 75 - 80 mph pace wouldn’t be asking too much from this rigs rubber. But I see your point . . . that’s a pretty brisk pace for such a big, heavy, rig, probably best to play it smart & ease up a bit. It’s prudent.
Glad you finally realized about the toilet... That's exactly what I was saying in my comment the other day... and I would run a bar across and for a shower curtain on to cover up the whole back end if you need your privacy on your throne, and also put a shower threshold across the floor so you can use that hole back area in front of the rear doors for a shower area. Add a drain in the floor and put a shower wand in the shells or whatever opposite wall of your toilet. As you're going to be putting in a hot water heater you said above the AC unit on that side anyway so you have hot water right there for you're sink and your shower and be keep all your plumbing simple and together. P.S. I could eat that steak 😜... I just don't like salad so yeah no... I've always wondered if they gave any substitutes... Salad yuck 🤮

FYI, most company trucks are governed around 61 mph. (I have heard low as 58). Maybe you could 3-D print an adapter toilet seat so you can use it sideways. Not to brag but I'm currently living in the "essence of luxury" rightnow man, I live alone.
my company truck ran at 68MPH, then when I "leased" it (I bought it outright), I had them disable the governor and turned the power up... they turn that down to! Truck would run triple digits if I let it!

You have to find someone to plug into your ECM and remove the top speed governor. The Allison transmission is set at the factory to 68.
Bob if you turn your truck up, don't make it a habit of cruising over 75MPH for long stretches, most HD truck tires aren't designed for over 75!

You could swap the rear axle gearing or add a 2 speed rear axle for more speed
