I love that you tell us what it’s supposed to look like and explain the texture. As a new canner that is the hard part, “the unknowns” of what to expect with the final product. This was the first thing I canned, and it has been a stable ever since, I buy ground beef 20lbs at a time just to can. I’m so glad I have been doing that for a long time and have a lot canned up. Yesterday ground beef was 7.89 a lb here.
When I did ground beef I had just started doing pc. We didn’t care for the texture but I know I was using too high a pressure. Finally learned how the weight was to jiggle - not a hard fast jiggle. I need to try this again.

I really like using some beef broth with ground beef. It just gives it a little extra seasoning. I've also made some with onions and garlic cooked with the meat. Except I forgot to mark the jars and they look like the others 🤣

I do the same thing with tomato paste. I flatten it and then press indentations in it separate it. That way its easier to break off. Works great. I can totally relate to the joys of getting a range hood. I finally got mine (for some reason the house didn't come with one) and I am so happy to be able to see what I'm doing again!
Texture issues: to help avoid mushy/paste end result, I don't chop the hamburger up much as it cooks, leaving large chunks (large grape sized). I also cook it fully with some crispy bits. As long as I don't saute and stir it a lot while reheating it retains it's shape pretty well
I canned ground beef this way last summer. When I opened it I didn’t like the “spamy” smell. The next time I canned it I added sautéed onions and beef broth. Hubby liked that one better. Thank you for the tutorial!
Hey Tanji! Thanks for the refresher and reminder. I only have a few jars left on my shelves so it’s time for me to pull some ground beef out of the freezer and get it canned. You did a very good video tangie. I also love to have the ground beef on hand but I discovered early on that I essentially cut up at least a half an onion to add to all of my recipes. I don't have a good place in my house to store onions so I worry about them going bad and this is a good way for me to have some onion in the ground meat and if I choose to add more I can or maybe just move up the flavor with some onion powder or dried minced onion or something. Has actually helped me on the storing onions part and if I don't have fresh onions or storage onions to use. Just a hint for anybody that's in the same pickle that I am.
I haven’t any caning as of yet. I love the idea of canning ground meat. When I do accumulate everything I need to can this will be my first one to try. Thanks 💕

I love canning ground beef it is definitely a fast go to. yes I have ground beef in my freezer for meatloaf , hamburgers, but it is something real quick for spaghetti sauce ,tacos . yes ground beef is it girl I think once you get over the idea of can meat you will definitely have this on your shelf.
I used to can taco sauce when we were eating tacos often. I have canned beef in the past. It is not something I find myself using very often. We really like canned beef roast in chunks.
I like canning ground beef and venison, too. Both loose as you did and made into patties. I use rings from jars, right side up on a plate, for the mold for patties. Fill with meat, lift the ring and then brown them for canning. Cook just long enough that the patties will hold together. Tip: There's no need to sterilize jars when pressure canning or when waterbath canning for 10 minutes or more. The canning process sterilizes the jars and the contents of the jars at the same time. Recently heard that waterbath canning recipes for 5 minutes processing time may be increased to 10 minutes, so that sterilizing jars for all types of canning will no longer be needed. Apparently the extra 5 minutes processing wouldn't hurt the few recipes that have that time.
